Caramel Pecan Rolls

Caramel Pecan rolls that are soft, sticky, and covered with chopped pecans. Perfect to make for breakfast, brunch, or as a dessert!

This is my grandma’s recipe for caramel pecan rolls. Super oldie but goodie! These are similar to cinnamon rolls but slightly different and with some shortcuts to make it easier. 

This recipe makes a huge sheet of rolls, so perfect to serve for a breakfast or brunch gathering. They also freeze well too, so even if you don’t have a party to make them for, go ahead and bake them up and freeze some of them to eat at a later time!

The pecans are also totally optional! Omit them if you want to, you will still be left with that caramel sauce that is so good! The pecans can also be swapped for other nuts such as walnuts, or slivered almonds.

Ingredients for Caramel Pecan Rolls

1 Box Hot Roll Mix, -Or use homemade dough recipe from my cinnamon rolls recipe.

2 Eggs, Slightly beaten

2 Tablespoons and 2 teaspoons Butter, softened

2/3 cup Warm Milk ( 105-115 degrees F)

1/3 cup packed brown sugar

1 teaspoon Cinnamon

1 Tablespoon sugar

1 packet yeast 1/4 oz. or about 2 and 1/4 teaspoons

How to make Caramel Pecan Rolls

Sprinkle yeast over the warm milk. Add 1 Tablespoon sugar, mix, then let it sit for 5 minutes.

Stir in the eggs, then add the hot roll flour mix.

Blend with the dough hook in an electric mixer.

Mix it until it forms a ball, dough will be soft. Cover with a towel, let it rise for 1 hour. Make sure the area that you let it rise in is room temperature, not too hot or not too cold.

Turn it over on a floured board and roll it out in a 24×12 rectangle.

Spread the surface of the dough with the softened butter. Mix together the brown sugar and cinnamon together and spread the mixture all over.

Roll it up lengthwise, and cut into 12 pieces.

How the make the caramel nut glaze for caramel pecan rolls

3/4 cup packed brown sugar

6 Tablespoons softened butter

3 Tablespoons light corn syrup

1 cup chopped pecans

Combine sugar, butter, and light corn syrup in a mixing bowl. Mix until fluffy, then stir in the nuts.

Grease a 12×9 pan and spread the caramel nut glaze in the bottom.

Layer in the rolls, cut side facing up. Cover, and let them rise for 1 hour.

Heat the oven to 375 degrees F. and bake the rolls for 30-35 minutes. Check them around the 25 minutes mark to make sure they are not over baking. Let cool for 2 minutes, then turn the pan over onto a platter, the caramel glaze that was on the bottom should now be covering the top of the rolls.

Notes

  • Serve Warm!
  • Freezes well too! Pop them in a freezer bag, when ready to eat, microwave on the defrost setting for 30 seconds or so.
