Ingredients for Autumn Harvest Salad

For the Salad:

Fresh mixed salad greens, I used romaine and arugula 6-8 cups 

Crisp apples (such as Honey crisp or Granny Smith), thinly sliced, 3 apples or 2 cups diced

Cooked bacon, crumbled, ½ pound or 4-6 slices 

Dried cranberries,1 cup 

Chopped walnuts, 1 cup

Crumbled feta cheese, 4-6 ounces 

For the Dressing:

6 tablespoons olive oil

2 tablespoons apple cider vinegar

2 teaspoons Dijon mustard

2 teaspoons honey

Salt and pepper to taste

How to make Autumn Harvest Salad

Cook the Bacon:

Cook the bacon, let it cool and then crumble it or chop it up into small pieces. I like to cook my bacon in the oven at 350 degrees F. for 15-25 minutes, or until crispy. Line the pan with aluminum foil for easy clean up!

Prepare the Dressing:

In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined. Set aside.

Assemble the Salad:

Begin by arranging a bed of fresh mixed salad greens on a large serving platter, large bowl, or individual plates. I used a mix of arugula and romaine in the picture.
