Strawberry Bundt Cake

Strawberry bundt cake filled with fresh strawberries and drizzled with icing. An easy and delicious dessert!

I love bundt cakes, they are one of my favorite things to make, and they look pretty too!

Just pop it out and drizzle some icing over the top and you have yourself a dessert centerpiece. 

This strawberry bundt cake turned out so fluffy and moist, just what I wanted. The fresh strawberries are the only ingredient that makes this a strawberry flavor, so if you wanted to swap a different fruit, you can! I do suggest swapping any kind of berries, such as blueberries, raspberries, or blackberries. Stick with the berries with this one, I’m not sure how the other fruits would do with their water content, wouldn’t want the cake to come out too watery.

Ingredients for Strawberry Bundt Cake

Butter: 1 stick (1/2 cup) of butter or margarine creamed together with the sugar. Make sure the butter is soft (room temperature) but not melted.

Sugar: 2 cups of white sugar creamed together with the butter.

Eggs: 2 egg added after the butter and sugar are mixed.

Flour: 2 and 2/3 cups of flour.

Baking Powder: 2 teaspoons baking powder, helps the cake to rise and be fluffy.

Milk: 1 and 1/4 cups milk, any kind, to add a creamy taste to the cake.

Vanilla Extract: 1 teaspoon of vanilla extract for flavor.

Salt: Dash of salt added for flavor, to balance out the sweetness.

Strawberries: Fresh strawberries cut into small pieces. Stick to the fresh kind, frozen would make the cake too watery.

For the Icing:

Powdered Sugar: 1 cup of powdered sugar.

Milk: 1 Tablespoon milk.

Lemon Extract: drop of lemon extract added for flavor.

Can the strawberries be switched for another kind of fruit?

Yes! Absolutely, the strawberries can be swapped out. I recommend sticking to the berry family if you are swapping, such as blueberries, raspberries, blackberries, or even cherries (make sure they are pitted!) would taste great. Other fruits might have too much juice in them and make the cake too watery. Also try and use fresh when possible.

What if I don’t have a bundt pan?

That’s ok! You can still make this cake in a 9×13 cake pan. Follow the same instructions but then watch your time while it is baking, depending on the thickness of your cake, it might take less than or more than the time in the recipe. Insert a toothpick in the center, when it comes out clean, your cake is done.

How to make Strawberry Bundt Cake

Gather your ingredients: flour, sugar, butter, eggs, vanilla extract, baking powder, salt, lemon juice, milk, and fresh strawberries.

Grab your bundt pan and grease it with either Crisco or non stick cooking spray. As you can see my bundt pan is a pretty old version that was handed down from my grandma! If you don’t have a bundt pan you can easily just use a 9×13 cake pan.

In a mix master, cream together the butter (make sure it is a soft but not melted) and sugar until nice and creamy.

Next, add the two eggs, lemon juice, and vanilla, beat until just combined.

Sift together the flour, salt, and baking soda.

Slowly add in the flour mixture and milk to the mix master, alternating between the two until both are all in.

Dice up the fresh strawberries into small pieces.

Fold the strawberries into the batter, then pour into the bundt pan.

Bake at 350 degrees F. for 45-50 minutes. Let it cool on a rack for 10-20 minutes.

Place a plate over the top of the bundt pan and turn it over, the cake should pop out on to the plate.

If it does not, carefully go around the edges of the inside of the bundt pan with a butter knife to loosen the cake. Then try it again.

How to make the icing for strawberry bundt cake

1 cup powdered sugar

1 Tablespoon milk

drop of lemon extract

Mix together all ingredients until smooth. You may have to add more powdered sugar or more milk to get a nice consistency to drizzle over the cake.

Add in a drop of red food coloring and mix together to get a pink color, or choose another color of your choice, or you can leave it white!

Drizzle over the top of the cake. You can add more or less icing depending on your preference. My family likes icing, but not a lot of it, so I just added a little bit to mine!

  1. Preheat the oven to 350 degrees F.
  2. In a mix master, cream together the sugar and softened butter.
  3. Add in the eggs, vanilla, and lemon juice, combine until just mixed.
  4. Sift together the flour, baking powder and salt.
  5. Add in the flour mixture and milk a little at a time to the mix master, alternating between the two.
  6. Dice up the strawberries and fold them into the batter.
  7. Grease a bundt pan with Crisco or non stick cooking spray. Pour the batter into the pan.
  8. Bake at 350 degrees F. for 45-50 minutes or until toothpick inserted comes out clean.
  9. Let it cool on a rack for 15-20 minutes.
  10. Place a plate over the top of the pan and flip over to release the cake onto the plate.
  11. Mix together the icing ingredients and drizzle over the top of the cake.

Notes

  • Try running a butter knife around the inside of the bundt pan if the cake does not seem to want to release.
  • More milk or more powdered sugar may be added to the icing to get the desired runny consistency for drizzling.
