Cherry Pecan Bread

Soft cherry pecan bread topped with an almond icing. Easy bread to make any time of the year. 

This is a very easy bread to make, using some usual pantry staples,  maraschino cherries, and pecans. I found this recipe in my church cookbook! I originally wanted to make cranberry orange bread, but fresh cranberries are not in season and I couldn’t find them in the store, so I started flipping through the church cookbook pages and found this delicious recipe. 

You can also choose to make this with the icing or without the icing. I like the little bit of sweet that the icing brings, so I always add the icing on mine!

What kind of cherries for cherry pecan bread?

The recipe calls for maraschino cherries, drained and chopped up. If you want to use fresh cherries, you can certainly switch them out. Just be sure to pit them and chop them up. The fresh cherries might not be as sweet as the maraschino cherries though. I would not use frozen cherries, they would make the bread too watery. If you wanted to be creative, you could also swap the cherries for fresh blueberries, raspberries, or strawberries!

How to make your own buttermilk

This recipe calls for buttermilk. I never have buttermilk in my fridge, so I always make my own, which is super easy! Just add one tablespoon of white vinegar into a measuring cup, then add enough milk in to the 1 cup line. Stir gently and then wait about 5 minutes or so. You will start to see the milk curdle slightly. If you don’t have vinegar, lemon juice, or cream of tarter work also!

Ingredients for Cherry Pecan Bread

Sugar: 3/4 cup of white sugar

Oil: Use 1/2 cup of either vegetable, sunflower, or canola oil.

Eggs: Two medium or large size eggs.

Flour: 2 Cups white flour. Whole wheat flour or almond flour can be substituted at a 1:1 ratio.

Baking Soda: 1 teaspoon, make sure your baking soda is fresh

Salt: 1/2 teaspoon salt

Buttermilk: 1 cup buttermilk. To make your own, add 1 tablespoon white vinegar to a measuring cup, then add in milk until it reaches the 1 cup mark. Stir, then let it sit for about 10 minutes before adding it to the batter.

Pecans: 1 cup chopped pecans, chopped walnuts could also be substituted.

Cherries: 1 -10 ounce jar maraschino cherries, drained and chopped. Fresh cherries can also be switch out, pitted and chopped.

Vanilla Extract: 1 teaspoon vanilla extract

Ingredients for the icing

1 cup powdered sugar

1-2 Tablespoons milk

drop of almond extract

How to make Cherry Pecan Bread

Gather your ingredients, sugar, oil, eggs, flour, baking soda, salt, buttermilk, pecans, cherries, and almond extract.

Sift together flour, baking soda, and salt. Set aside.

In a mixer, cream together the sugar, oil, and eggs until light and fluffy.

Add in the flour mixture and buttermilk, alternating between the two while mixing together.

Chop up the pecans and add to the bowl.

Drain and chop up the cherries, add to the bowl.

Gently mix in the nuts, cherries, and vanilla extract on a low speed until just mixed.

Pour the batter into a greased 9x13x3 inch loaf pan.

Bake at 350 degrees for 55-60 minutes. Mine actually took around 65 minutes to get done, but everyone’s ovens cook different.

Allow the bread to cool for 20 minutes, then run a butter knife around the edges to release it from the pan. Tip over and the whole loaf should just pop out. Turn right side up and then you can add the icing.

How to make the icing for Cherry Pecan Bread

Mix together the powdered sugar, 1 tablespoon milk and drop of almond extract. Keep adding milk slowly and mixing it until it is a drizzly consistency.

Drizzle the icing over the top of the cooled bread and sprinkle some more crushed pecans over the top!

Stays fresh on the countertop for 3-5 days. Good for 7 days in the fridge. Try warming it up in the microwave before serving if it is coming from the fridge. Only around ten seconds or so should make it taste like it it straight out of the oven!

  4. Pour batter in a 9x5x3 greased loaf pan.
  5. Bake at 350 degrees for 55-60 minutes.
  6. Remove and let cool for 20 minutes.
  7. To make the icing mix together the powdered sugar, 1 tablespoon milk, and almond extract. Keep slowly adding the milk until it is a drizzly consistency.
  8. Drizzle the icing over the top of the cooled bread and sprinkle with crushed pecans.
