I am always looking for a way to get my kids to eat more veggies! I mean they do eat some on their own but not as much as I would like them to.

They tend to be a bit picky in that category..my daughter only likes broccoli, and my son only likes carrots. Which is great, but I would love for them to get some diversity when it comes to their veggie eating! That is why I jump at any recipe that has hidden veggies in them.. Especially sweet treats!

I made these (without my kids watching me put the zucchini in them..lol) and my kids gobbled them up two to three at a time.  They taste just like regular chocolate chip muffins..it’s crazy! You can’t even see the zucchini in there either!

One extra step I do like to take and do whenever I am baking or cooking with shredded zucchini is to squeeze out the excess water from it.  Like…really squeeze it all out. I use paper towels and just press down really hard with my hands and keep repeating this until there is very little water/juice left.

Ingredients for Chocolate Zucchini Muffins

3/4 cup oil

2 cups sugar

3 eggs

2 1/2 cups flour

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup baking cocoa

2 teaspoon vanilla extract

2 cup shredded zucchini

1 1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 cup milk

1/2 cup semi sweet chocolate chips

How to make Chocolate Zucchini Muffins

Peel and shred the zucchini using a grater or a food processor. I used two small zucchini and it gave me a about two cups.

You can always make more and then freeze the shredded zucchini. Just make sure to drain the excess water off before freezing! Also, drain the water off after freezing, before adding it the the batter. The frozen zucchini makes it super easy to make these muffins whenever you want!

Squeeze off the water from the shredded zucchini using paper towels.

Mix the oil and sugar together in a mixer. Add in the eggs and mix together.

Combine the flour, baking powder, salt, baking cocoa, baking soda, and cinnamon together.

Slowly add the flour mixture to the oil mixture and mix together.

Add in the shredded zucchini and milk and mix together.

Line the muffin pans with liners or spray them with non stick spray.

Fill 3/4 of the way with the batter.

Throw in 4-6 chocolate chips in each muffin cup.

Bake at 350 degrees Fahrenheit for 20 minutes. Toothpick should come out clean. Cool for 20 minutes.

  3. Slowly add in the flour mixture to the oil mixture.

  6. Add in the shredded zucchini and milk to the other ingredients and mix.
  7. Line muffin pans with liners or spray with non stick spray.
  8. Pour in batter to fill 3/4 of each muffin cup.
  9. Add in 4-6 chocolate chips to each muffin.
  10. Bake at 350 degrees Fahrenheit for 20 minutes.
  11. Toothpick should come out clean.
  12. Remove and cool for 20 minutes.
