Slow Cooker Beef Stew

Delicious slow cooker beef stew with potatoes, carrots, and peas in a savory stew sauce! Easy and healthy weeknight meal.

This Beef Stew is super easy to make and has minimal prep time! 

The ingredients for this are pretty basic and you probably already have most of them on hand. 

I love this recipe because it takes just a couple minutes to prep and then pop it in the slow cooker and dinner is done for the day!

This slow cooked beef stew is perfect for a chilly rainy day..which is what it has been doing here all week! Oh well…beef stew to the rescue!

You can either leave the meat in chunks, or you can shred it apart with forks to make shredded beef. This does not call for a lot of ingredients but the flavor is AMAZING! Searing the beef before it goes into the slow cooker,  gives it lots more flavor. So don’t skip that step please!

 This is also a meal that my kids love to eat!  Especially if I shred the meat so it is more bite size.

Also feel free to swap out the potatoes for different veggies to make this a low carb meal!

Ingredients for Slow Cooker Beef Stew

  • Beef Stew Meat: 1 pound of the cut up beef stew meat, a beef roast can also be used, just cut it up into small cubes before cooking it.
  • Potatoes: 2-3 potatoes, peeled and chopped into 1 inch cubes. Russet potatoes work best, but small golden potatoes work here too and the skin can be left on those.
  • Carrots: 1-2 carrots, peeled and sliced into rounds.
  • Peas: 5 ounces of canned, frozen, or fresh peas.
  • Onion: 1 onion, chopped up in small pieces.
  • Beef Stock: 1 cup of beef stock. I prefer the Knorr beef bouillon to make my own beef stock.
  • Flour: 1 Tablespoon flour to thicken the sauce.
  • Italian Seasoning: 1 Tablespoon Italian Seasoning for flavor.
  • Salt and Pepper: Added for flavor.

How to make Slow Cooker Beef Stew

Heat one tablespoon of oil on a skillet on the stovetop over high heat. Wait until the oil is hot and then sear the beef until just browned on each side.

Transfer beef and juices to the slow cooker.

Chop up the onions, potatoes, and carrots.

In the same skillet add a little more oil and saute the chopped onions and carrots.

Cook until onions are soft (couple of minutes), then add the onions, carrots, and juices to the slow cooker.

Add the chopped up potatoes and 1 cup of beef stock to the slow cooker. My favorite is the Knorr beef bouillon seasoning …so good and makes all the difference in flavor!

During the last 30 minutes add the peas.

Add 1 tablespoon of flour to a tablespoon of water to make a paste, then add it to the slow cooker and mix in to thicken up the sauce.

  3. Add the beef and all the juices to the slow cooker.
  4. Chop up the onion and peel and dice the carrots. Add some more oil to the pan and saute the veggies until onions are just starting to soften. Add to the slow cooker with juices.
  5. Peel and chop up the potatoes into 1 inch cubes. Add to the slow cooker.
  6. Pour 1 cup beef stock, 1 Tablespoon Italian seasoning, salt, and pepper to the slow cooker and cook on low for 5-6 hours, or until potatoes are tender and the meat falls apart.
  7. During the last 30 minutes, add in the peas.
  8. Add 1 tablespoon of flour to a tablespoon of water to make a paste, then add it to the slow cooker and mix in to thicken up the sauce.
