This recipe comes to the rescue when you need a dessert but didn’t plan for one! The ingredients in this are all something that I always have in my pantry or fridge. 

My daughter love, love, loves everything vanilla! Ice cream, cakes, cupcakes, if it comes in vanilla flavor, she loves it. Which is why I find myself making this recipe more than I usually would. 

The buttercream frosting really makes these cupcakes taste amazing! Dress these up with some sprinkles for fun and to match any party or holiday!

Ingredients for Vanilla Cupcakes

2 cups flour

3 teaspoons baking powder

1/2 teaspoon salt

1/2 cup butter

1 1/2 cups sugar

4 eggs, separated

1 cup milk

1 1/2 teaspoon vanilla extract

Buttercream Frosting

1/2 cup butter, softened

4 cups powdered sugar

1/4 teaspoon salt

4-5 Tablespoons milk

2 teaspoons vanilla extract

How to make Vanilla Cupcakes

Preheat the oven to 350 degrees Fahrenheit.

Combine the flour, baking powder, salt, and set aside.

Separate the egg yolks from the egg whites.

In a mixer, whip up the egg whites with the remaining sugar on high until fluffy and smooth.

Fill the muffin tins 2/3 full of the batter. Grease muffin tins or put in muffin liners. (Guess my muffin liners were a little too big for my tins! They still turned out!)

Bake for 20-30 minutes or until toothpick comes out clean.

Cool for 10 minutes before removing from the pan.

Add part of the sugar and salt and beat again.
