Blueberry Coffee Cake

This recipe is super easy to make and reminds me of the coffee cakes you get in the store…but better!! I am such a sucker for breakfast sweets and coffee cakes is one of my favorites. I just had to try this recipe out for myself and it did not disappoint!

I actually did a mix of fresh and frozen blueberries in my recipe and it turned out great. I can’t tell the difference between the two. 

The coffee cake is definitely on the denser side, like a pound cake, but still super soft and moist. A lot of other coffee cakes have a streusel topping but I actually love the icing on this one! The icing gives it the perfect top off without adding too much additional sugar. 

Do I have to use blueberries or can I use another fruit?

You can definitely use another fruit! As long as it is not too juicy. So any kind of berries would be great in this. Strawberries, raspberries, blackberries, cherries, and apples would all be a wonderful substitution for the blueberries. You can even use the canned fruit pie filling if you don’t have fresh or frozen fruits!

What size pan is needed to make Blueberry Coffee Cake?

I used a 12×17 baking sheet with an edge. Anything similar to that size would be ok to use as long as there is an edge on it. If it is smaller than my baking sheet just watch the time while it is baking, it might take longer since it is thicker. I wouldn’t really recommend anything bigger than what I used because it was spread pretty thin on my pan. 

Do I need to refrigerate the coffee cake after it is baked?

You can if you want, but you don’t need to. Blueberry coffee cake is ok to stay out at room temperature for 1-2 days. You can also put it in the refrigerator and it will last for up to 7 days. In both cases make sure that it is wrapped up in foil or in a container to keep it moist and fresh. 

Can I freeze the Blueberry Coffee Cake?

Yes! It does freeze well. I like to wrap the squares individually with plastic wrap or aluminum foil. Then place all those in a freezer bag. They will stay good for about 2-3 months.

Ingredients for Blueberry Coffee Cake

Butter: Gives the coffee cake a rich flavor. Make sure the butter is room temperature and soft, but not melted.

Sugar: Adds sweet flavor to the coffee cake

Eggs: Adds structure while baking so it doesn’t fall apart.

Flour: The base of the batter.

Baking Powder: Allows the coffee cake to be soft and raised.

Salt: Balances out the sweet flavor.

Vanilla Extract: Adds a sweet vanilla flavor to the coffee cake and the icing.

Lemon Juice: Adds a hint of tart to the coffee cake.

Blueberries: Fresh or frozen are best. Other fruit can be used such as strawberries, raspberries, blackberries, apples, or peaches would all taste great. Fruit pie filling in a can also could be used.

Powdered Sugar: Used for the icing on top of the coffee cake.

Milk: Added to the powdered sugar to make the icing.

Almond Extract: Secret ingredient added to the icing to make it taste super yummy!

How to make Blueberry Coffee Cake

Gather your ingredients, you will need a mix master for this recipe.

Blend together the butter and sugar until creamy.

Add eggs one at a time and blend together in between each egg.

Add the flour ,baking powder, salt, vanilla, and lemon juice and blend together.

The batter is pretty thick, which surprised me, I thought it would be runnier. But don’t worry it turns out great! Grease a 12×17 pan with sides with Crisco and then do your best to spread 3/4 of the batter on the pan. Try to get it as even as possible. (save the rest of the batter to dot over the blueberries)

Layer all the blueberries over the batter, spreading out evenly.

Take the remaining batter and dot it among the blueberries. Don’t worry it will spread while it bakes!

Bake at 350 degrees F. for 30 minutes. If your pan is smaller than mine, it might take longer to bake due to it being thicker.

How to make the icing

Measure 1 cup powdered sugar .and add in the vanilla and almond extract, and milk. Stir all together. You want it to drizzle off your fork so it drizzles over the coffee cake nice. If the icing is too thin, add a little more powdered sugar. If the icing is too thick add a little bit more milk.

  1. Preheat the oven to 350 degrees. F.
  2. In a mix master, blend together the butter and sugar until creamy.
  3. Add eggs, one at a time, mixing between each egg.
  4. Add in the flour, baking powder, 1 and 1/2 teaspoons vanilla, salt, and lemon juice. Mix until creamy.
  5. Grease a 12×17 pan with Crisco.
  6. Pour 3/4 of the batter in the pan and spread out evenly.
  7. Layer the blueberries on top of the batter, evenly spread out.
  8. Take the remaining batter and spread over the top of the blueberries, sparsely.
  9. Bake for 30 minutes, or until toothpick inserted comes out clean.
  10. To make the icing mix the powdered sugar, 1/4 teaspoon vanilla extract, 1/4 teaspoon almond extract, and 1/2 Tablespoon milk together. Keep adding the milk a little at a time until you get a consistency that you can drizzle with. Runny but not too runny.
  11. Drizzle the icing in lines over the top of the warm coffee cake.
  12. Best served warm!

Notes

  • Can be frozen for 2-3 months, wrapped or stored in freezer bags.
  • Good for 7 days when stored in the fridge.
  • Good for 1-2 days room temperature.
