Homemade Cinnamon Rolls

Perfectly soft and chewy homemade cinnamon rolls.  A breakfast treat filled with cinnamon swirl and topped with cream cheese frosting. 

These are hands down the best cinnamon rolls I have ever eaten!  My mom likes to make these a lot! She also gets requests to make these and bring them with wherever she goes! 

These homemade cinnamon rolls are perfect to bring to any occasion to share with everyone! Not only are they a breakfast dish, they make a great dessert dish too! The recipe makes a big pan, so plenty to go around!

This is made with a homemade sweet dough recipe, cinnamon filling, and cream cheese frosting. A three step process but totally worth it!

Ingredients for Homemade Cinnamon Rolls

Sweet Dough

2 eggs (room temperature)

1 cup warm milk (110 degrees- 115 degrees Fahrenheit)

2 1/2 teaspoons yeast

1/2 cup sugar

1/3 cup melted butter

1 teaspoon salt

4 to 4 1/2 cups flour

Filling

1 1/2 cups brown sugar

1/2 cup flour

2 Tablespoons cinnamon

1/2 stick softened butter

Frosting

2 Tablespoons softened butter

1 1/2 ounces cream cheese

1 cup powdered sugar

1 Tablespoon half & half

1/4 teaspoon vanilla extract

1/4 teaspoon almond extract

will also need 1/4 cup half & half to pour over the rolls before cooking them.

How to make Homemade Cinnamon Rolls

Making the dough:

Dissolve the yeast in the warm milk with 1 Tablespoon sugar until foamy.

Add the eggs, butter, salt, and the rest of the sugar. Add to the mixer and mix until just blended.

Add the 4 cups of flour and mix until just blended.

Let the dough rise for 5 minutes.

Using the dough hook to your mixer, mix for 5-7 minutes.

Or you can hand knead for 5-7 minutes.

Can add up to 1/2 cup flour if needed-no more.

Dough will be sticky.

Put in a greased bowl and cover with plastic wrap and let rise for 30 minutes.

Making the cinnamon rolls and filling

Prepare filling by mixing together the brown sugar, flour, and cinnamon.

Roll the dough out on a floured surface to a 24 x 15 shape approximately.

Spread the softened butter over the dough.

Add the filling ingredients that you mixed together over the top.

Roll up the dough jelly roll style.

Pinch ends together to seal the seam.

Cut into 12 slices.

Place in a greased pan. ( I used spray oil).

Cover with plastic wrap and let rise 20 minutes.

Preheat the oven to 350 degrees Fahrenheit for dark pans or 375 degrees Fahrenheit for glass pans.

Warm up the 1/4 cup half & half ( not hot) and pour over the risen rolls, allowing to soak down around the rolls.

Bake for 22-25 minutes. Check at 20 minutes, if getting too brown, cover with foil the remaining 5 minutes.

Making the frosting

To make the frosting, blend the cream cheese and butter together. Then add the powdered sugar, half & half, vanilla, and almond extracts until smooth.

Pour the frosting over the rolls and serve warm!

  1. To make the Sweet Dough:
  2. Dissolve yeast in the warm milk with 1 Tablespoon sugar until foamy.
  3. Add the eggs, butter, salt, and the rest of the sugar.
  4. Add the the mixer and add the 4 cups of flour and mix until just blended.
  5. Let rise for 5 minutes.
  6. Using the dough hook attachment on the mixer, mix for 5-7 minutes.
  7. Can also knead by hand for 5-7 minutes. Can add up to 1/2 cup more flour if needed- no more.
  8. Dough will be sticky. Put in a greased bowl, cover with plastic wrap, and let rise for 30 minutes.
  9. Assembling the Rolls
  10. Mix the dry filling ingredients together, set aside.
  11. Roll dough out on a floured surface to a 24 x 15 shape.
  12. Spread the 1/2 stick of softened butter over the dough evenly.
  13. Sprinkle the dry filling ingredients over the top of the butter, evenly.
  14. Roll the dough up long wise, jelly roll style.
  15. Pinch edges together to seal the seam.
  16. Cut into 12 slices.
  17. Place slices swirl side up in a greased pan. Cover with plastic wrap and let rise for 20 minutes.
  18. Preheat the oven, 350 degrees Fahrenheit for dark pans, 375 degrees Fahrenheit for glass pans.
  19. Warm up the 1/4 cup half & half (not hot).
  20. Pour the cream over the risen rolls, allowing it to soak down around the rolls.
  21. Bake for 22-25 minutes.
  22. Check at 20 minutes, if getting too brown, cover with foil the remaining 5 minutes.
  23. Let the rolls cool for about 10 minutes before adding frosting.
  24. Cream Cheese Frosting
  25. Blend the cream cheese and butter together.
  26. Add in the powdered sugar, half & half, vanilla, and almond extracts. Blend until smooth.
  27. Pour over the rolls. Serve warm!
