White Chicken Chili

White chicken chili all done in the crockpot. Easy recipe made with chicken, northern beans, pepper jack cheese, salsa, and cumin. 

This is by far one of the easiest recipes I have ever made. It’s so easy and it tastes amazing! Just pour all the ingredients in the crockpot and cook on low for a few hours and it’s done! 

I made this even easier by purchasing chicken in a bag that is precooked. You can find these bags of chicken in either the frozen section or the refrigerated section in your grocery store. From there I just chopped up the chicken a little more and then added it to the chili. 

If you don’t buy the pre cooked chicken, you can buy boneless skinless chicken breasts, cook them and then shred or cut them up into small pieces. This is a great recipe to use leftover chicken in as well!

The pepper jack cheese and salsa make this chili a little spicy, but we are not talking crazy spicy, just a little hint of spice. 

These ingredients are all very pantry and freezer friendly. Which means that you can stock up on these items in your kitchen and then you can make this chili whenever you want.

Ingredients for White Chicken Chili

Chicken: Any kind of chicken, cooked and then cut up or shredded and then added to the chili. This recipe is a great way to use leftover chicken.

Great Northern Beans: In a jar or can and pour the juices into the chili as well. Also can use cannelloni beans instead of great northern beans.

Salsa: One big 16 ounce jar of salsa is needed. I use medium in this recipe, but a mild or spicy salsa can also be used depending on how spicy you want the chili to be.

Pepper jack Cheese: Use the shredded kind, it will be easier to melt into the chili.

Cumin: Adds a nice smokey flavor to the chili.

Great northern beans, chicken, pepper jack cheese, salsa, and cumin.

If you are using fresh chicken, cook it first either in the oven, in a pan on the stovetop, or throw it in the slow cooker first before adding the other ingredients.

Once the chicken is cooked shred it up and add it to the slow cooker.

I love using the pre cooked chicken because it is so much faster! Or if you have leftover chicken to use up this is a great recipe for that!

Add the great northern beans, salsa, pepper jack cheese, and cumin. Stir everything together, cover and cook on low for 3-4 hours.

Done! So super easy right! If you want to cook this on the stovetop instead, just combine all the ingredients and simmer on low for 1 hour, stirring every so often.

  1. Cook the chicken and shred or cut into small pieces. Add to slow cooker.
  2. Combine in the slow cooker with the chicken, the beans with the juice, salsa, cheese, and cumin.
