Oatmeal Peanut Butter Cookies

Old fashioned oats will take the place of the flour in this recipe. Old fashioned oats, peanut butter, eggs, brown sugar, vanilla, salt and baking soda are all that are in this. Oh, and if you want, a few chocolate chips thrown in will make it taste super yummy!

I LOVE baking these for my kids because the ingredients are so close to what a protein or power bar would have in it, I feel like it’s a healthier version of a cookie.  Plus my kids can’t stop eating them, but I don’t feel so bad about it.  So win-win for the moms! 

It is also so fast and easy to whip up, you don’t even need a mix master. Just a simple bowl and mix everything together with a spoon or spatula. Almost as easy as making cookies or brownies from the box mix! 

I am always surprised how thick and chewy these turn out, considering there is no flour. I think they will always fall flat but they don’t. I totally love soft and chewy cookies which is probably why I love making these! 

This is a small batch recipe. It only makes about 14-16 cookies depending on how big your cookie size is. I actually love that about it because there are only 2 trays of cookies that have to bake.

So when my kids ask for cookies I can whip these up in about 40 minutes or so. Other recipes for cookies can sometimes take hours, because they make so many cookies that you end up in the kitchen all afternoon baking cookies!

Eggs: Added to keep the cookie together while baking.

Brown Sugar: Brings a sweet flavor to the cookie.

Baking Soda: Helps the cookies to rise while baking and be soft.

Salt: Added to help balance out the sweet flavor.

Vanilla Extract: Gives the cookies a hint of vanilla flavor.

Peanut Butter: Adds a creamy texture to the cookies.

Old Fashioned Oats: Takes the place of flour in these cookies.

Semi Sweet Chocolate Chips: Optional, but these are super yummy added in for a touch of chocolate flavor.

How to make Oatmeal Peanut Butter Cookies

First get a nice big bowl to mix all your ingredients in.

Next add the eggs and brown sugar, mix together until well combined.

Then add the baking soda, salt, and vanilla. Mix those in until combined.

Now you can add the peanut butter and mix that in until everything is nice and creamy.

Then add the old fashioned oats and chocolate chips until just combined.

Using a cookie scoop, scoop out the cookies on a baking sheet. I like to spray my baking sheets with a non stick cooking oil and then wipe it off. I think it gives it just enough so that the cookies don’t stick.

Press the cookies down just a bit using your hands.

Bake at 350 degrees for 12-14 minutes. I like mine a little more on the done side, so I let mine cook the full 14 minutes and then I check them and sometimes leave them in for a minute or two longer.

Let them cool on the baking sheet for 10 minutes, then remove and cool on wire racks. ENJOY!!

  1. Preheat oven to 350 degrees.
  2. Line baking sheets with parchment paper or spray on non stick spray and then wipe off.
  3. Whisk the eggs and brown sugar together.
  4. Mix in the baking soda, salt, and vanilla.
  5. Stir in the peanut butter and mix until creamy and smooth.
  6. Stir in the oats and chocolate chips until just combined.
  7. Scoop out in ball shapes on baking sheets and then flatten out a little with your hands.
  8. Bake for 12-15 minutes, then let cool for 10 minutes on baking sheet.
  9. Remove and cool on wire racks.
