Taco Soup

Easy taco soup with beans, ground beef, tomatoes, and seasonings. Combine ingredients and simmer for a fast and delicious weeknight dinner!

This is one of the easiest soups I have ever made. There are only 8 ingredients and most of them are canned. Just brown the ground beef and then combine it with all the beans, tomatoes, and seasonings. 

This comes together in about 10 minutes, then simmer for 30-40 minutes. You could even throw it all in a slow cooker to do the simmering!

Perfect for taco nights when it gets chilly out! Serve it up with your favorite taco toppings and some tortilla chips and you have yourself an easy meal!

Ingredients for Taco Soup

Ground Beef: Lean ground beef or ground turkey, browned, broken into small pieces, and drained from any grease. This is the only ingredient that is pre cooked and then added to the soup.

Chili Beans, Pinto Beans, Black Beans: A three bean trio, all from the cans and undrained.

Diced Tomatoes and Rotel: One can of each for a nice tomato base for the soup.

Dry Ranch Seasoning and Taco Seasoning: One packet of each for flavor. If you are looking for a homemade taco seasoning recipe find mine here!

How to make Taco Soup

Gather your ingredients. Ground beef or ground turkey, chili beans, pinto beans, black beans, Rotel (diced tomatoes with green chilies), diced tomatoes, dry ranch seasoning, and taco seasoning.

I like to use my dutch oven for this recipe but any big stock pot would be ok to use.

Brown the ground beef or ground turkey in the bottom of a dutch oven with a little bit of olive oil. Break apart into small pieces, then drain any excess grease.

Add in the chili beans, pinto beans, and black beans along with the juices from the cans.

Then add in the Rotel, diced tomatoes, dry ranch seasoning, and taco seasoning.

Stir all together and bring to a soft boil, then turn down to low and simmer uncovered for 30-40 minutes, stirring every 15 minutes or so.

Serve warm with your favorite taco toppings such as shredded cheese, sour cream, avocados, or tortilla chips!

How to cook Taco Soup in the Crockpot!

I have also made this taco soup recipe in the crockpot!

Just cook the meat like the instructions in the beginning, then add the meat and all other ingredients to the crockpot and cook on low for 1-2 hours.

Make your own homemade Taco Seasoning!

I always find myself needing taco seasoning and not having any! So I came up with this homemade one that uses spices that you probably already have in your pantry.

This recipe makes up a small container full, so I like to make up batches and then store them in an airtight container in my spice cabinet. Making it like this allows me to always have some on hand when I need it!
