CrockPot Beef Stroganoff

This crockpot beef stroganoff is comfort food at it’s best. It’s mid February and so cold here in the Midwest.  Starting to get the winter blues a bit and miss playing outside in the nice weather and swimming in the pool! Really craving some comfort food from all the cold. So beef stroganoff it is! Plus it’s all done in the crockpot!

I like to pick up a package of beef stew meat already cubed up since it’s easier, but you can always buy a big piece of beef and cut it up yourself. 

 For me this is one of those recipes that if you have certain ingredients you put them in, but if you don’t have them,you don’t need to put them in.  I’m talking about the mushrooms and onions mostly. Sometimes I have them on hand and add them, but other times I don’t and it still tastes great!

I just love cooking in the crockpot don’t you!? It’s like set it and forget it , go about your day, and then like magic..dinner is done! 

One thing I don’t like however, is that sometimes the flavor can be lacking in crockpot recipes. So I have tweaked this recipe a bit so that there is no flavor lost when it cooks!

What kind of meat do I use for Crockpot Beef Stroganoff?

I prefer the beef stew meat that is already cut up in small sections. That is the most convenient, since there is no prepping. You can use any kind of beef roast if you can’t find beef stew meat. Beef chuck roast, beef round roast, or beef chuck tender roast are all good options. If you go with the big roasts, you will have to chop the roast into small cubes before searing. Since this meat is cooked low and slow, the meat will be tender no matter what the cut.

Ingredients for Crockpot Beef Stroganoff

  • Beef Stew Meat: The beef stew meat that is already cut up is very convenient. Any kind of beef roast can be used though, since this is cooked low and slow, it will be tender.
  • Beef Broth: Use a good quality beef broth for best flavor. I prefer the Knorr beef bouillon to make my beef broth with since it has amazing flavor!
  • Cream of Mushroom Soup: Used for flavor and adds creaminess to the beef.
  • Egg Noodles: The pasta that is preferred but any kind of pasta can be used.
  • Sour Cream: Added at then end after the meat cooks, for creaminess and a tangy flavor.
  • Onion: (optional) Chopped up and added in with the meat while it cooks. Sometimes I add the onions, sometimes I leave them out, depends on who is eating and if they like onions.
  • Mushrooms: (optional) Chopped up and added in with the meat while it cooks. Adds extra flavor.
  • Flour: Added with a little water and then mixed in with the beef at the end of cooking to thicken up the sauce.
  • Worcestershire Sauce: Added for flavor.

How to make Crockpot Beef Stroganoff

First, sear the beef on a very hot pan on the stovetop until just browned. Then, pour it in the slow cooker with its juices. 

Easy to prepare, slow cooked and delicious! This Beef Stroganoff is comfort food at its best!

In the same pan you seared the meat, saute the onion and mushrooms in a little oil for a few minutes.

I’m sure you could just throw them in the slow cooker without sauteing them, but I think this step adds a bit more flavor!

Add the mushrooms and onions into the slow cooker along with the beef broth, and cream of mushroom soup. I like to use the Knorr Beef Boullion to make my beef broth. It has so much flavor and it comes in a powder mix, so you can control how much to add to control the sodium content.

Cook on high for 4 hours, or low for 5-6 hours ( or until the meat starts falling apart)

When the meat is done, cook the pasta according to the directions on the package. Drain and set aside.

Whisk the flour and 1 Tablespoon of water together and then add to the slow cooker to thicken up the sauce a bit. Then add a little Worcestershire sauce to give it a nice color and flavor. 

Add in the sour cream and stir until just mixed.

Finally you can add your cooked noodles, and stir it up to mix it all together!

  1. Sear the beef stew meat on the stovetop over high heat, until just browned on the outside. 2 minutes or so. Add beef and all the juice from the pan to the slow cooker.
  2. Cook onions and mushrooms in a little olive oil on the stovetop on high heat. 2 minutes or so. Add them to the slow cooker.
  3. Add beef broth and can of mushroom soup to the slow cooker. Mix everything together.
  4. Set the slow cooker to low and cook 5-6 hours, or on high for 4 hours.
  5. Once meat is done shred with a fork in the slow cooker.
  6. Mix the tablespoon of flour with 1 tablespoon water and add it to the slow cooker to thicken up the sauce. Let it cook for a couple minutes.
  7. Add the Worcestershire sauce and sour cream to the slow cooker, mix everything together.
  8. Cook noodles on stovetop, drain and add to slow cooker. Mix together and serve.
