Ingredients for Pumpkin Chili

1 pound ground beef (or ground turkey for a lighter option)

1 onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 ounces) pure pumpkin puree

1 can (15 ounces) diced tomatoes

1 can (15 ounces) black beans, drained and rinsed

1 can (15 ounces) kidney beans, drained and rinsed

1 can (15 ounces) corn kernels, drained

2 cups chicken or vegetable broth

2 tablespoons chili powder

1 teaspoon cumin

1/2 teaspoon paprika

1/2 teaspoon cinnamon

Salt and pepper to taste

Olive oil for sautéing

How to make Pumpkin Chili

Sauté the Aromatics: In a large pot or Dutch oven, heat a drizzle of olive oil over medium-high heat. Add the diced onion, diced red bell pepper, minced garlic, and sauté until they become translucent and fragrant.

Add the Spices: Stir in the chili powder, cumin, paprika, cinnamon, salt, and pepper. Cook for another 2-3 minutes to toast the spices, enhancing their flavors.

Brown the Meat: Add the ground beef (or turkey) to the pot and cook until it’s browned, breaking it up with a spoon as it cooks. Drain any excess fat if needed.

Incorporate Pumpkin and Veggies: Add the pumpkin puree, diced tomatoes, black beans, kidney beans, and corn kernels to the pot. Mix everything well to combine the ingredients.
