These anise snap cookies are one of the staples that I always make at Christmas time. They are a bit unique with the anise flavor but by far are my favorite of all the Christmas cookies!

They are a soft and chewy cookie, but if left out, can take on a harder texture.

I don’t know about you but I am a lover of soft cookies! My mom and Grandma however love cookies that are hard, so they let these sit out and then like to dunk them in their tea.

Also, these don’t have to have sprinkles on them! We just like to do that to make them look more like Christmas.

Ingredients for Anise Snap Cookies

Butter: Used to give the cookies a rich flavor.

Sugar: Blended well with the butter and gives the sweet flavor to the cookies.

Eggs: Added to give the cookies structure so they don’t fall apart while baking.

Cake Flour: The base of the dough. Use cake flour to make the cookies airy and less dense.

Baking Soda: Helps the cookies rise while baking.

Salt: Balances out the sweet flavor.

Cream of Tartar: Helps to keep the cookies from getting a crispy texture from the sugar. Also helps make the cookies to be fluffier.

Anise Seeds: This is what gives the cookies a hint of licorice flavor.

How to make Anise Snap Cookies

This recipe calls for cake flour, but if you need to substitute it you can. Just remove 2 Tablespoons from 1 cup of regular flour, then add 2 Tablespoons of cornstarch and sift together well. Do this for each cup of flour that you need.

Cream butter and sugar together well.

Add in eggs

Mix in dry ingredients( flour, baking soda, salt, and cream of tartar) a little at a time.

Add in anise seeds at the end.

Roll in a big ball.

This dough can be covered with plastic wrap and refrigerated if you want to make the cookies the next day or two.

Shape into small balls 1 inch in diameter and dab the tops of the balls in sprinkles

Place a couple inches apart on the trays.

Bake at 400 degrees Fahrenheit for 8-9 minutes.

Description

Ingredients

Instructions

  1. In a mixer cream the butter and sugar together.
  2. Add in the eggs until just mixed.
  3. Combine the cake flour, baking soda, salt, and cream of tarter.
  4. Slowly add in the dry ingredients to the mixer.
  5. Add in the anise seed last until just mixed.
  6. Shape dough into small balls about 1 inch in diameter.
  7. Dab the tops of the balls in sprinkles.
  8. Place on trays a couple inches separating the balls, sprinkle side up.
  9. Cook at 400 degrees Fahrenheit for 8-9 minutes.
  10. Let the cookies cool on the pans for about 5 minutes before removing them and letting them cool on cooling racks.

Notes

  • You can make the dough in advance and store in the refrigerator wrapped in plastic wrap.
