I love to make banana bread. It seems that whenever I buy bananas the kids eat a few and then the rest just sit there. 

So sometimes I freeze them for smoothies but I can only freeze so much before my freezer is overflowing with them! This is another nice way to use up those unwanted bananas! 

This is a super easy recipe to make, only 8 ingredients!  I like to use the electric mixer, but you can stir it by hand if you don’t have one. 

Also you can totally eliminate the nuts if you have allergies or just are not a big nut fan, but I am, so nuts for me!

Ingredients for Banana Nut Bread

Eggs: 2 eggs, helps the bread stay together while baking.

Bananas: 3 ripe and mashed to a puree. Used in place of an oil.

Vanilla Extract: Gives a hint of vanilla flavor to the bread.

Sugar: Added to make the bread a little sweeter.

Flour: The base of the batter.

Baking Soda: Helps the bread to rise and be light and airy.

Salt: Balances out the sweet flavor.

Walnuts: Chopped and added for extra flavor, optional.

How to make Banana Nut Bread

Preheat the oven to 350 degrees.

Peel and mash the bananas in a bowl. Make sure the bananas are really ripe and soft so they mash up nice.

Using an electric mixer, or stirring by hand, mix the bananas, eggs, and vanilla extract.

Add the sugar and mix in.

Add in the flour, baking soda, salt, and mix.

Stir in the nuts last.

Use shortening to butter the loaf pan.

Pour the batter into the buttered loaf pan.

Bake at 350 degrees for 1 hour. Remove and let cool for 20 min.

Keeps for about 1 week when stored in the refrigerator. You can leave it at room temperature, but it will only last for 3-5 days. To re heat from the fridge, pop a slice in the microwave for 10-20 seconds, it will taste like it is straight from the oven!

Make Banana Nut Muffins!!

You can also make muffins with this recipe! Make the batter the same way, but then fill muffin tins with the batter. Use muffin liners or grease each muffin cup and fill with batter 3/4 the way in each cup. Bake at 350 degrees F. for 20-30 minutes, or until toothpick comes out clean.
