Honey Oatmeal Bread

Have you ever made homemade bread in a dutch oven??? It is AMAZING and so super easy!!

I LOVE my dutch oven so any recipe that calls for using a dutch oven.. I am IN! So yes, you will need either a dutch oven, or some other oven proof pot with a lid for this recipe.

There are only 6 ingredients in this bread and I bet that you have all of these in your pantry already! Which makes this a great recipe to whip up without taking a trip to the store. 

There is a bit of waiting for the dough to rise, so what I do is mix up the dough ingredients at night before I go to bed, then let it rise for 12 hours and bake in the morning. Then I have nice warm bread to eat for the day!

Ingredients for Honey Oatmeal Bread

Flour: 2 cups are used, regular or whole wheat flour are both options to use.

Old Fashioned Rolled Oats: Uncooked and use the old fashioned oats, not the instant oats.

Water: Warm (108 degrees Fahrenheit) water used to activate the yeast. If you are using instant yeast, don’t worry about the temp, just make sure the water is warm.

Salt: Added for flavor and balances out the sweet flavor.

Yeast: Used to make the bread rise. Instant or rapid rise yeast are both ok to use.

Honey: Drizzled on top of the bread before baking to add a sweet flavor.

Cooking Oil: To coat the dutch oven before putting the dough in to bake.

How to make Honey Oatmeal Bread

In a bowl add the oats, flour, salt, and yeast.

Stir together.

Add the warm water (108 degrees Fahrenheit) and mix together gently with a fork.

Cover and let the dough rise for 12 hours.

After 12 hours, uncover and place on a floured surface.

Roll into a ball shape on the floured surface. Mine was on the sticky side, so I was not shy with the flour. I used enough so that it was not sticky anymore.

Place in a bowl and cover and let the dough rise again for 30 minutes.

While you are waiting for the dough to rise, preheat the oven to 425 degrees Fahrenheit. Place your dutch oven in the cold oven and then preheat the oven, so that the pot gradually warms up.

Once the oven has preheated and dough is done rising, take the dutch oven out and wipe the inside with cooking oil so it is nice and oiled.

Place the dough in the center and drizzle the honey over the top. I also like to sprinkle some of the oats on top to make it look pretty.

Cover with the lid, and place back in the oven and bake for 30 minutes.

After 30 minutes, take the lid off and bake for another 15 minutes.

Remove from the pan and slice up.

  1. Combine the flour, oats, salt, and yeast. Stir together.
  2. Add the warm water and mix together with a fork.
  3. Cover and let it rise for 12 hours.
  4. Place dough on floured surface and form into a ball. Cover and let it rise again for 30 minutes.
  5. Preheat the oven to 425 degrees Fahrenheit, place the dutch oven in the oven while it is preheating to let it gradually heat up.
  6. Take the dutch oven out and wipe the inside with cooking oil. Place the dough in the middle. Drizzle the honey and a few oats over the top of the dough.
  7. Cover with the lid and bake for 30 minutes.
  8. Take the lid off and bake for 15 minutes.
  9. Take out of pan and slice up.
