Chocolate Walnut Fudge

This is an old recipe that comes from my Grandma’s kitchen. This is an old fashioned way to make a classic fudge with walnuts. So good, creamy, and melts in your mouth!

This is one of my family’s Christmas favorites, but really you can make it any time you want!

So just to be prepared, this is not one of those microwave recipes! There are a few steps to this, but seriously worth it. 

A little bit of boiling the ingredients together in the beginning, then I throw it in the mix master to mix all the chocolate together!

Press it all down in a pan and let it cool. Then you can choose to cut it up as you choose!

You will need a few things to make this fudge besides the ingredients. A candy thermometer, big stock pot, and a 15 x 10 pan with sides for letting the fudge cool.

Ingredients for Chocolate Walnut Fudge

White Sugar: 6 cups of regular white sugar.

Butter: I cup of butter ( 2 sticks), will be melted with the cream cheese on the stovetop.

Evaporated Milk: 1 can (12 ounces) is added with the sugar on the stovetop to help dissolve the sugar.

Cream Cheese: 8 ounces is melted with the butter on the stovetop, brings a creamy flavor to the fudge.

Milk Chocolate Chips: 2 cups (11.5 ounce package)

Semi Sweet Chocolate Chips: 2 cups (12 ounce package)

Bittersweet Chocolate: 4 ounces, you can usually find bittersweet in a bar form.

Marshmallow Fluff: 13 ounces ( 1 jar), helps everything stick together.

Almond Extract: 1/2 Tablespoon added for flavor.

Vanilla Extract: 1 Tablespoon added for flavor.

Walnuts: 1 and 1/2 cups ,chopped (optional) you can leave the nuts out if you choose to.

How to make Chocolate Walnut Fudge

Grease a 15 x 10 pan with sides with Crisco and set aside.

In a big stock pot on the stovetop, melt the butter and cream cheese on medium heat until they start to soften.

Add in the milk and sugar and cook on medium heat.

Whisk together often till a full boil about 20-30 minutes.

Continue to boil, stirring constantly till it reaches a temperature of 234 degrees Fahrenheit. (about 10-13 minutes)

Remove from the heat and stir in all chocolates, then stir in the marshmallow.

Keep beating until smooth and glossy. (about 10 minutes)

If you choose, you can transfer the mix to the mix master to do all the mixing and it turns out just as great! Saves on your arms too!

Stir in both the almond and vanilla extracts and the nuts last.

Pour the batter into the greased pan and press down so that it it even all over.

Cover with parchment paper and refrigerate for 2 hours.

Then slice up into small squares.

When cut into small squares like the picture above, this recipe should give you around 100 or more squares.

This fudge will last for a couple weeks when kept in the refrigerator. Also freezes well!

  2. In a big stock pot, over medium heat, cook the cream cheese and butter together until soft.
  3. Add in the sugar and milk and heat, whisking often, until a full boil. (about 20-30 min)
  4. Boil, stirring constantly, until it reaches a temperature of 234 degrees Fahrenheit. (about 10-13 min)
  5. Remove from heat and stir in all chocolates and marshmallow fluff.
  6. Beat until smooth and glossy. (about 10 minutes) If you wish, this part can be done in a mix master.
  7. Stir in almond and vanilla extracts and nuts at the end.
  8. If you want to garnish the top with some walnuts, save some for this step.
  9. Pour batter into the greased pan and press down until even all over.
  10. Cover with parchment paper and refrigerate for 2 hours.
  11. Slice up into small squares to serve.

Notes

  • Fudge will stay good for a couple weeks in the refrigerator. Also freezes well!
  • Serving size depends on how big the squares are cut.
