Ingredients for Bourbon Pumpkin Pancakes
1 cup all-purpose flour
2 tablespoons brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
3/4 cup canned pumpkin puree
1 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
2 tablespoons bourbon
1 teaspoon vanilla extract
Cooking spray or additional butter for the pan
How to make Bourbon Pumpkin Pancakes
In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, and spices (cinnamon, nutmeg, cloves, and ginger).
In a separate bowl, combine the pumpkin puree, buttermilk, egg, melted butter, bourbon, and vanilla extract. Mix until well blended.
Gradually pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined. Be careful not to over mix; a few lumps are perfectly fine.
Preheat a non-stick skillet or griddle over medium heat. If desired, lightly grease the cooking surface with cooking spray or a small amount of butter.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then carefully flip and cook the other side until golden brown.
Continue this process until all the batter is used, adjusting the heat as needed to prevent burning.
Once the pancakes are cooked, stack them on a serving plate. If you’d like, keep them warm in a preheated oven at 200°F (93°C) while you finish cooking the rest.
Serve your bourbon pumpkin pancakes with your favorite toppings. Traditional options include maple syrup, whipped cream, chopped nuts, or a sprinkle of powdered sugar.
Enjoy your fall-inspired breakfast masterpiece!
