Lemonade Cupcakes

I made these adorable cupcakes for my daughter’s birthday party. I wanted something more exciting than vanilla or chocolate and stumbled upon this recipe and they turned out absolutely delicious! I also added cute little paper straws and little lemon slices on top of each one to dress them up a bit. 

To make this super easy, I used a cake box mix, and then just added some extra ingredients to make it into lemonade flavored cupcakes! I also used the pre-made lemon frosting, but I do have a homemade one you can use instead that I will post below! So, let’s roll up our sleeves and get baking!

Banana Nut Bread

Ingredients for Lemonade Cupcakes

1 Cake Box Mix (yellow or lemon flavor will work)

3 large eggs

1 tablespoon lemon zest

1 cup lemonade

½ cup vegetable oil 

For the Lemonade Buttercream Frosting:

½ cup unsalted butter, softened

3 cups powdered sugar

2 tablespoons lemonade

1 tablespoon lemon zest

Yellow food coloring (optional)

How to make Lemonade Cupcakes

Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a medium bowl, whisk together the cake mix, lemonade, eggs, and oil.

Zest the lemon and stir in the batter. 

You can use an electric mixer or mix by hand.

Mix until well combined.

Fill each cupcake liner about two-thirds full with the batter. This will allow room for the cupcakes to rise while baking.

Bake the cupcakes in the preheated oven for 16-19 minutes or until a toothpick inserted into the center comes out clean. Once baked, remove the cupcakes from the oven and let them cool completely on a wire rack.

Making the Lemonade Buttercream Frosting

Add this step if you don’t have the pre-made lemon frosting.

While the cupcakes are cooling, prepare the Lemonade Buttercream Frosting. In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar, lemonade, lemon zest, and a few drops of yellow food coloring (if desired). Beat until the frosting is smooth and fluffy.

Once the cupcakes are completely cooled, frost them with the Lemonade Buttercream Frosting. You can use a piping bag or simply spread the frosting on top of each cupcake with a spatula.

Lemonade Cupcakes

For an extra touch, garnish the cupcakes with a lemon slice or sprinkle some additional lemon zest on top. I also took some striped paper straws, cut them into short pieces and placed them alongside the lemons to top the cupcakes.
