French Toast Casserole

A French Toast casserole baked with a pecan and brown sugar topping. Made the night before, then baked in the morning for an easy breakfast. 

This French toast casserole is perfect to make to feed a crowd. Easily made up the night before,  let all that bread soak overnight, then bake in the morning! Made in a 9×13 pan, this makes a lot, and is super filling. 

Also, since it is all done in one pan( no stovetop necessary) cleanup is a breeze!

This would make a perfect breakfast for any holiday or busy morning. You could also easily add some fresh fruit on top like strawberries or blueberries to make it really fancy!

These kinds of breakfast recipes are my favorite! Usually I am very busy cooking breakfast for everyone and trying to make sure everyone eats while it’s hot! Well, with this casserole, I just pop it in the oven, wait till it’s done, and then everyone (including ME!) gets to eat at the same time! 

This really tastes like gourmet French toast from a restaurant. That is because it uses French bread sliced up for the bread, which is thicker than the regular white bread you would usually use when you make it at home. That combined with the pecan and brown sugar topping really makes this taste amazing!!

How to make French Toast Casserole

Ingredients for French Toast Casserole

For the French Toast:

1 loaf French bread (18-20 slices)

8 eggs

2 cups milk

1 cup half and half

2 Tablespoons sugar

1 Tablespoon vanilla extract

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

dash of salt

Pecan Topping:

1 stick butter (1/2 cup)

1 cup brown sugar

1 cup pecans, chopped

2 Tablespoon light corn syrup

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

Get a nice big fresh loaf of French bread from the bakery.

Slice it up into 18 or 20 pieces.

Generously grease a 9×13 pan with either butter or Crisco.

Layer all the slices of bread in the pan.

In a bowl combine the eggs, milk, half and half, sugar, vanilla, nutmeg, cinnamon, and salt.

Beat until blended but not too bubbly.

Pour over the bread, spooning some over the top to make sure all the pieces are covered.

I pressed mine down a little to get them more soaked.

Cover with foil and refrigerate overnight.

That was easy right!!??

The next morning preheat the oven to 350 degrees F.

Make up the pecan topping. In a bowl combine the butter, brown sugar, pecans, light corn syrup, cinnamon, and nutmeg.

Mix it all together with a fork.

Spread it out evenly all over the top of the bread.

Bake for 45 minutes until puffed up and golden in color.

  4. In a bowl combine eggs, milk, half and half, sugar, vanilla, nutmeg, cinnamon, and salt.
  5. Beat until blended but not too bubbly.
  6. Pour the egg mixture over the bread, make sure each slice is covered.
  7. Cover the pan with foil and refrigerate overnight.
  8. The next morning preheat the oven to 350 degree F.
  9. To make the pecan topping: In a bowl add softened butter, brown sugar, pecans, light corn syrup, cinnamon, and nutmeg.
  10. Mix together with a fork and then spread over the top of the bread.
  11. Bake for 45 minutes, until puffed up and golden.
