Ingredients for German Potato Salad

To create a mouthwatering German Potato Salad, gather the following ingredients:

2 pounds of waxy potatoes (such as Yukon Gold or Red Potatoes)

1/2 pound of bacon, diced

1 medium onion, finely chopped

1/3 cup of apple cider vinegar

1/4 cup of chicken or vegetable broth

2 tablespoons of grainy mustard

2 tablespoons of granulated sugar

Salt and pepper to taste

Chopped fresh parsley for garnish

How to make German Potato Salad

Boil the Potatoes:

Start by washing and scrubbing the potatoes to remove any dirt. You can peel the potatoes if desired, but leaving the skins on adds a rustic touch. I chopped up my potatoes before boiling them.

German Potato Salad

Place the potatoes in a large pot of cold, salted water.

Bring the water to a boil and cook the potatoes until they are tender but still firm. This usually takes around 15-20 minutes, depending on the size of the potatoes.

Cook the Bacon and Onions:

While the potatoes are boiling, you can cook the bacon and onions.

In a skillet, oven, or microwave, cook the diced bacon until it’s crispy. Remove the bacon and place it on a paper towel-lined plate to drain excess grease.

My favorite is cooking the bacon in the oven at 350 degrees F. for 20 minutes or until the bacon is nice and crispy. Use aluminum foil for a fast and easy clean up!

In a skillet, saute the chopped onion in a bit of butter until it’s translucent and slightly caramelized.

Create the Flavorful Dressing:

In a bowl, mix together the apple cider vinegar, chicken or vegetable broth, grainy mustard, and granulated sugar. This combination of flavors will give your German Potato Salad its signature tangy-sweet taste.

Combine and Assemble:

Once the potatoes are cooked, drain them and let them cool slightly.

Pour the prepared dressing over the warm potatoes. This allows the potatoes to absorb the flavors better.

German Potato Salad

Add the sautéed onions and crispy bacon to the bowl as well.

Gently toss the mixture to ensure the dressing is evenly distributed and coats every potato slice.

German Potato Salad

Season with salt and pepper according to your taste preferences.

Serve and Enjoy:

Let the German Potato Salad sit for a little while before serving. This allows the flavors to meld together beautifully.

Garnish with freshly chopped parsley for a burst of color and a touch of freshness.
