Corned beef sliders oven baked with Swiss cheese and Thousand Island dressing. Delicious and easy weeknight meal or appetizer!

These corned beef sliders are my own version of a Reuben sandwich that I made with leftovers from a corned beef dinner.

They are a quick and easy weeknight meal! Even easier if the meat is leftover, but if not, you can just pop the meat in the slow cooker for the day!

Can you believe that I had never had corned beef until I met my husband and his family had me over for St. Patrick’s Day corned beef dinner?? I remember thinking, what is this!? But man oh man was I hooked since then.

Now I make it all the time..not just for St. Patrick’s Day! 

The Hawaiian buns make these a little sweeter, but I prefer them that way! Of course I think I would like anything on Hawaiian buns..they are so so good!

From there I just added some Swiss cheese and thousand island dressing and baked them a bit in the oven and…TA DA! Homemade corned beef sliders!

You could add some sauerkraut to make these even more like a Reuben copycat if you want! These are pretty tasty as leftovers too.

Ingredients for Corned Beef Sliders

  • Corned Beef Brisket: 3-5 pounds depending on how many sandwiches you want to make.
  • Hawaiian Buns: 8-12 buns, regular size buns if you want a full sandwich, mini buns if you want the mini slider sandwiches.
  •  Swiss Cheese: 8-12 slices of Swiss cheese.
  •  Thousand Island Dressing: 4-5 ounces divided among the sandwiches, check out my homemade recipe further down this post!

How to make Corned Beef Sliders

Rinse off the corned beef and pat dry with paper towels.

Place in a slow cooker and rub the seasoning packet all over the meat.

Add a little water to cover the bottom of the slow cooker.

Cook on low 7-8 hours, or high 5-6 hours. Meat should shred apart easy with a fork.

Either shred the corned beef or slice against the grain. Sometimes I cut off the fat and discard it before adding the meat to the sandwiches.

Place the Hawaiian bun bottoms in a 13 x 9 baking dish that has been greased.

Then add some Swiss cheese to each bun bottom.

Layer some corned beef next on top of the cheese.

Add the thousand island dressing on top of all the meat.

Top with another layer of cheese and the tops of the buns, cook in the oven at 350 degrees for 10-15 min. Or until the cheese is melted and everything is warm.

I used regular sized Hawaiian hamburger buns in these pictures. If you are looking to make them as appetizers, buy the small sized Hawaiian buns that will make smaller bite sized sandwiches.

Homemade Thousand Island Dressing for Corned Beef Sliders

3/4 cup oil

1 Tablespoon vinegar

1/2 cup sugar

1/4 cup ketchup

2 Tablespoons pickle relish

2-3 Tablespoons water or pickle juice

1/4 teaspoon salt

dash pepper

dash paprika

1 and 1/4 cup Miracle Whip

1 Tablespoon ground French fried onions

In a food processor, add oil, vinegar, and sugar, mix until well blended. Add ketchup, pickle relish, onions, water, salt, pepper, and paprika, mix again until well blended. Add the Miracle Whip and mix well. Makes about 2-3 cups.

  1. Cook the corned beef in a slow cooker for 7-8 hours on low or 5-6 hours on high, with the seasoning packet and 1 cup of water. Should pull apart easily with fork when the meat is done.
  2. Grease a 9×13 pan with non stick cooking spray, layer the bottom of the buns in the pan.
  3. Layer the Swiss Cheese, shredded corned beef, Thousand Island dressing, and another layer of cheese, then the top bun.
  4. Bake at 350 degrees F. for 10-15 minutes, or until the cheese is melted.
