Southwest stuffed peppers filled with shredded chicken, rice, corn, and cheese melted over the top. An easy, healthy and filling weeknight meal.
I made these even easier to make by placing all the ingredients for the filling in the slow cooker. Just threw them all in there for a few hours, shredded the chicken up and mixed it all together and it was ready to be stuffed in the peppers!
As I was making these, I realized that this filling would also be great for enchiladas too! So either way it would make for a super flavorful dinner. These can also be made with ground beef or ground turkey too!
After the ingredients are done in the slow cooker, stuff the peppers and pop them in the oven for 30 minutes or so with some melted cheese over the top..YUM, YUM, YUM!!
The cooking time in the oven all depends on how you like the peppers, with a little crunch, or all the way cooked. It’s up to you! I like mine with a little crunch so I left them in about 30 minutes. I also added a little tomato juice in the bottom of the baking dish, just to keep everything moist.
Also get creative with the topping for this! Add some guacamole, different cheeses, cilantro, sour cream, avocados, the possibilities are endless!

Ingredients for Southwest Stuffed Peppers
1/2 pound chicken breast (boneless, skinless)
1 (11 ounces) can Mexican corn
1 (10 ounce) can Rotel
6 ounces Spanish rice
1 Tablespoon taco seasoning
4 bell peppers, tops cut off and cored
2 cups water
1 cup shredded Fresco cheese
1 cup tomato sauce
optional: black beans
How to make Southwest Stuffed Peppers
Place chicken, corn, Rotel, uncooked rice, taco seasoning, and 2 cups water in a slow cooker. Cook on high for 2-3 hours, or until chicken is done and rice is tender.

Mix all ingredients together while shredding up the chicken.
Preheat the oven to 350 F.
Wash the peppers and cut off the tops and core them.
Place them in an oven safe baking dish.
Fill each pepper with the mixture from the slow cooker.
I placed any extra filling on the bottom of the dish.
Shred the cheese and set aside.
Add the tomato sauce to the bottom of the dish and bake the peppers for 30-45 minutes, depending on how done you like your peppers.
During the last 10 minutes sprinkle the cheese over the top of the peppers and cook some more.

- In a slow cooker place chicken, uncooked rice, corn, Rotel, taco seasoning, and 2 cups water. Cook on high for 2-3 hours, or until chicken is done and rice is tender. Mix everything together shredding the chicken up too.
- Preheat the oven to 350 F.
- Wash the bell peppers, cut off the tops and core them.
- Place the peppers in a baking dish and fill with the chicken mixture.
- Put any extra filling in the bottom of the baking dish. Pour the tomato sauce in the bottom of the dish.
- Bake the peppers for 30-45 minutes, depending on how done you want your peppers.
- During the last 10 minutes, sprinkle the cheese over the tops and return to the oven.
Notes
- Top with more cheese, avocados, sour cream, guacamole, or cilantro!
