Creamy Chipotle Sauce

Creamy chipotle sauce is a creamy blend of mayo, cilantro, honey, chipotle pepper, and lime juice. Perfect topper for pork tacos, burgers, and chicken!

This sauce is pretty easy to make and only takes a couple minutes. I also love that you can control how spicy to make it. 

The recipe calls for 1 chipotle pepper from a can of chipotle peppers in adobo sauce. So depending on the size of the pepper, you can put the whole pepper in or cut it in half, depending on how spicy you want it. 

So after making this sauce a couple times, I realized that I don’t use the other peppers in the can for anything else that I cook. So instead of tossing out the rest of the can, I froze each pepper individually. This way I can just take out one pepper at a time for when I make this sauce!

I have also used plain Greek yogurt in place of the mayo for a healthier version. Tasted just as great! You could also do a mix of half mayo and half Greek yogurt. Mix it up to your liking. 

The only kitchen tool you will need for this is a food processor.

Ingredients for Creamy Chipotle Sauce

Mayo: 1 cup mayo or plain Greek yogurt, or do a mix of half of each

Cilantro: 1 cup, roughly chopped

Lime Juice: Squeeze all the juice from 1 lime, or about 3 Tablespoons

Honey: 3 teaspoons, use raw local honey for best flavor, and added health benefits!

Garlic Cloves: 2 garlic cloves, minced, or about 2 teaspoons of crushed garlic. Use fresh garlic for the best flavor.

Chipotle Pepper: 1 pepper from a can of chipotle peppers in adobo sauce, try freezing the rest of the peppers you aren’t using to use at a later time!

How to make Creamy Chipotle Sauce

Add in the mayo or Greek yogurt to the food processor. I used a mix of half mayo and half Greek yogurt.

Roughly chop the cilantro, it’s going to get blended in the food processor, but I like to give it a quick chopping just so I am not left with any big leaves in the sauce.

Add the cilantro, lime juice, honey, garlic, and chipotle pepper into the food processor.

Blend until smooth and everything is evenly mixed. You might have to scrape down the sides a couple time and mix again.
