I love any kind of soup with fresh broccoli in it! I usually just buy the bag of Bear Creek broccoli soup mix and then add in fresh broccoli. Well, the day came that I was craving broccoli soup, I didn’t have the bag mix, but I did have a bunch of fresh broccoli!
So I went to my mom’s old church cookbook to see if there were any I could make from scratch! Sure enough, I found this creamy broccoli soup recipe! There were actually a few recipes in there for broccoli soup, so I kind of just put a few of them together to make a soup that I thought sounded good.
This particular recipe does not have the cheese in it that so many other broccoli soups have. I actually preferred it without the cheese in it, believe it or not! You can always add some shredded cheese on top of this to add a little cheese flavor if you like.

Ingredients for Creamy Broccoli Soup
Chicken or Vegetable Broth: 3 cups of either chicken or vegetable broth.
Milk: 3 cups of whole milk, use whole milk to make it a creamier soup.
Onion: 1 onion, finely chopped.
Carrots: 1 cup chopped carrots, I like to use the shredded carrots that come in a bag.
Broccoli: 2-3 cups fresh broccoli chopped up into small pieces.
Butter: 4 Tablespoons butter melted with the flour to make a roux before adding the broth and milk.
Flour: 4 Tablespoons flour melted with the butter to make the roux.
Salt & Pepper: Fresh ground pepper and fresh ground sea salt added to taste.
How to make Creamy Broccoli Soup
In a large Dutch oven or other large pot, melt the butter, add the chopped onions, and cook about 4 minutes.
Add the flour and mix together. It should be really thick.
Slowly add a little milk at a time, stirring in between.
Add about 1/2 cup of milk at a time. Let it cook and let the mixture get thick again before adding more milk. Continue doing this until all the milk is added.
Once all the milk is added, add the chicken broth and stir together.
Chop up the broccoli and carrots into small bite sized pieces. I usually buy the carrots that are already shredded, so I can just throw those right in.
Add the chopped broccoli and carrots to the soup along with some salt and pepper to taste.
Simmer until everything is warm.
If the broth seems too thin, add 1 tablespoon cornstarch mixed with 1 tablespoon water to the soup and let it simmer. This should thicken it up a bit.
Serve warm with sourdough bread!
Good for 5-6 days when leftovers are stored in the refrigerator.

- In a large Dutch oven, melt the butter. Add the onions and cook for about 4 minutes.
- Add the flour and stir together until it is a thick mixture.
- Slowly add milk, 1/2 a cup at a time, stirring in between, until all the milk is added.
- Add the chicken broth and stir together.
- Chop up the broccoli and carrots, then add them to the soup.
- Mix together and add the salt and pepper to taste. Simmer until everything is warm.
- Serve warm with sourdough bread.
