This is more of a bar than a cookie. Super simple to do too! Just layer all the ingredients in the pan and then bake!
A melted mix of chocolates, butterscotch, coconut, pecans, all on top of a graham cracker crust.
It makes a big 9 x 13 pan so plenty of bars for a party or event.
This is also one of my family’s Christmas favorites, but can be made anytime throughout the year! We usually let the kids make this one since it’s so easy to do. So if you are looking for a good dessert to make with kids, pick this one!

Ingredients for 7 Layer Cookie Bars
Butter: (1/2 cup), melted together with the sugar and graham crackers crumbs to make the bottom portion of the bars.
Sugar: Added with the butter and graham cracker crumbs to make it a little bit sweeter.
Graham cracker crumbs: This is what makes up the bottom crust part of the cookie bar.
Shredded Coconut: Use the sweetened coconut for this recipe.
Semi Sweet Chocolate Chips: One 12 ounce bag makes up one of the layers.
Butterscotch Chocolate Chips: One 12 ounce bag makes up the other layer of chocolate.
Sweetened Condensed Milk: One 15 ounce can poured over the top of the layers.
Pecans: Chopped up finely and added as the top layer of the cookie bars.
How to make 7 Layer Cookie Bars
So I know that there are eight ingredients, and these are called seven layer cookies…so there should be seven ingredients..right!!??lol
The original recipe has seven ingredients but then we tweaked it a bit to make it a little sweeter.
We added the little bit of sugar to the graham cracker crust. I guess then we never felt the need to rename the cookie, so it stays 7 Layer Cookie Bars, with eight ingredients..lol.
First, add the graham crackers, sugar, and melted butter together and then press it all down in a greased 9×13 pan.
Then spread the coconut over it evenly.
Next spread the chocolate chips and butterscotch chips evenly all over.
Pour the can of sweetened condensed milk evenly all over.
Last spread the pecans evenly over the top.
Now here is a little secret….let this sit for about 30 minutes to let the condensed milk seep down into all the ingredients.
Then bake it at 350 degrees for 30 minutes.
Let it cool and then slice into small squares.
This will make anywhere from 40-50 bars, depending on what size you cut them at.

- Grease a 9×13 pan with Crisco.
- Combine the butter, sugar, and graham cracker crumbs. Press into the bottom of the pan evenly.
- Spread the coconut on next, evenly all over.
- Spread the semi sweet chocolate chips and butterscotch chips evenly over the coconut.
- Pour the sweetened condensed milk over the mixture, evenly.
- Last spread the nuts evenly over the top.
- Let the mixture sit for about 30 minutes to let the milk seep down into the ingredients.
- Preheat the oven to 350 degrees Fahrenheit while you wait.
- Bake at 350 degrees Fahrenheit for 30 minutes.
- Let cool about 30-60 minutes before cutting into squares.
