Scotcharoos are a rice krispie treat made with peanut butter and topped with a chocolate butterscotch mix. With only 6 ingredients these are super easy to make!
These have long been a family favorite growing up. They are very addicting and oh so delicious!
Also so easy to make! Almost like making Rice Krispie treats but switching out a few ingredients and then adding the chocolate on top.
These are a “no bake” dessert too! However, you do have to use the stovetop to melt the sugar and corn syrup for a couple minutes. Then use the microwave to melt the chocolates for a minute or so, but then it’s done!
You can cut these up into big bars or little bars. If you cut it up into little bars they will make about 30-40 bars. They also freeze well!

Ingredients for Scotcharoos
Rice Krispies: 6 cups of rice krispies
Light Corn Syrup: 1 cup of light corn syrup, I use the Karo Syrup.
White Sugar: 1 cup of white sugar, melted with the syrup.
Peanut Butter: 1 cup creamy peanut butter, mixed in with the melted sugar and syrup.
Semi Sweet Chocolate Chips and Butterscotch Chips: 6 ounces of each, melted together and spread over the top of the scotcharoos.
How to make Scotcharoos
Coat a 9 x13 deep pan with Crisco.
Coat a big bowl with non stick cooking spray and add the Rice Krispies.
In a medium pan on the stovetop, add the syrup and sugar over high heat until just a boil. Remove from the heat as soon as it starts to boil, do NOT let it sit and boil, otherwise the scotcharoos will be hard and not soft and chewy.
Add in the peanut butter and mix well.
Pour that mixture into the Rice Krispies and mix together.
Pour into the 9 x 13 pan and press down.
Put the chocolate and butterscotch chips into a microwave safe bowl.
Microwave for 30 seconds at a time, stirring in between, until melted.
Pour the chocolate mixture over the top of the Rice Krispies. Spread evenly all over the top.
Refrigerate for 1 hour or so until the chocolate is set. Remove from the pan by tipping it upside down. The whole thing should just pop right out. Then proceed to cut into squares.

- In a medium sauce pan add the syrup and sugar. Heat over high heat on the stovetop until it just starts to boil, remove from heat. Do NOT let it boil.
- Add in the peanut butter and mix well.
- Coat a big bowl with non stick cooking spray and add the Rice Krispies. Pour the peanut butter mixture over the top and mix well.
- Pour the Rice Krispie mixture into the 9 x 13 pan and press down.
- In a microwave safe bowl add the chocolate and butterscotch chips. Microwave for 30 seconds at a time, stirring in between, until melted.
- Stir the chocolate mixture and pour over the top of the Rice Krispies. Spread evenly all over the top. Refrigerate for 1 hour, or until chocolate is hard.
- Remove from the refrigerator and turn the pan over to remove. The whole thing should just pop out. Turn over and cut into squares.
