Romanian crepes are a quick and easy breakfast favorite! With only 6 ingredients, this is a budget friendly breakfast dish.
This is an authentic Romanian breakfast favorite! These are VERY easy to make and whip up in a matter of minutes. With only 6 ingredients and most of them being very basic, these are super budget friendly. In Romania these are called clatites, but in my family we always nicknamed them scourveers, for some odd reason.
You will find these a little sweeter than your regular crepe. Also, they keep better in the fridge for leftovers as they are less dry.
The way we eat them ,is to spread a topping over one side, and then roll them up!
There are a number of fillings and toppings we always use. Jelly, sour cream, cinnamon and sugar, fresh fruit, or cottage cheese were some of our favorites! My kids’s new favorite is Nutella, strawberries, and whipped cream! You can use whatever combination that you prefer.
I will show you down below some of our favorite combos! Then you can either eat them with your hands, or you can stack them all up on a plate with some powdered sugar or syrup! YUM YUM YUM!
If you are cooking for a larger crowd, I would double this recipe, as this usually makes somewhere between 5-6 small crepes.

Milk: Whole milk will make the crepe creamier and richer.
Flour: Used to thicken the batter.
Sugar: Just a little added for a sweet flavor.
Salt: Helps balance out the sweet flavor.
Vanilla Extract: Added for a subtle vanilla flavor.
Egg: For substance to help keep the crepe together while cooking.
How to make Romanian Crepes
Mix all ingredients together in a big bowl with a whisk
Heat a non stick pan on the stovetop over high heat. A small pan around 8 inches is a good size to use, it will be easier to swirl the batter around in.
Spray with a non stick cooking spray for the first crepe only.
Use a little ladle and pour a ladle full in the pan and pick up the pan and swirl it around so it’s nice and thin.
Bake 30 seconds or so until bubbles appear
Flip over with a fork or small spatula. Cook the other side 30 seconds to a minute until just browned.
Cook them one at a time in the pan. Stack them off to the side on a plate covered with a towel to keep them warm!
