Does it get any easier than this soup!? Seriously, I just throw everything in the slow cooker and let the cooker do all the work! Yes! I love these kinds of recipes. Sometimes things get so busy that you need an easy recipe that you can whip up in minutes.
Really the only prepping is cutting up the veggies that are in this.
This pasta fagioli is very easy to play around with too. You can get rid of the noodles all together or get gluten free noodles. You can remove the meat if you want a meatless meal. The chicken stock can also be substituted out for vegetable stock!
I love to make this recipe for Halloween weekend so we all have something warm to eat before and after trick or treating! When done in the slow cooker, it’s perfect that you can just leave it on the counter in the warm setting so everyone can eat whenever!

Ingredients for Pasta Fagioli
Ground Turkey: 1 pound of ground turkey or ground beef can be used.
Onion: 1 onion, diced into small pieces.
Carrots: 4 carrots, chopped into small rounds.
Celery stalks: 3 celery stalks, cut in half long wise and chopped into small pieces.
Kidney Beans: 1 can(15.5 ounces) dark red kidney beans, drained and rinsed.
Cannellini Beans: 1 can(15.5 ounces) cannelloni beans, drained and rinsed.
Ditalini Pasta: 3/4 cup uncooked pasta added straight to the slow cooker. Other small pasta could be substituted, such as elbow macaroni pasta or the small shell pasta.
Chicken Stock: 4 cups chicken stock added to make the broth. I prefer to make my chicken stock using the Knorr Chickne Bouillon.
Rotel tomatoes with chili peppers: 1 can (10 ounces)
Marinara Sauce: 1 jar (24 ounces) of any kind of marinara sauce.
How to make Pasta Fagioli
Add the ground beef to the bottom of the slow cooker.
Chop or dice up the onion, carrots and celery. Add to the slow cooker.
Set the slow cooker to high. Let it cook a bit until the meat starts to brown, chopping up the meat into small pieces as it cooks. Let this cook about 30 min or until the meat starts to brown a little.
If you prefer, you can cook the meat first and then add the cooked meat to the slow cooker to skip this step.
Drain and rinse the beans and add in the slow cooker.
Add in the marinara sauce and the Rotel and mix well.
Let this mixture cook for about 30 min or so.
Add in the chicken stock and noodles and turn the slow cooker on low.
Cook for 4 hours or until the noodles are done and veggies are tender.
Set it to the warm setting if you plan on serving it in the slow cooker.
Serve with warm bread or bread sticks!

- Turn slow cooker on high and add ground turkey.
- Chop or dice the onion, carrots, and celery. Add to the slow cooker.
- Cook on high until the ground turkey has browned a bit.
- Drain and rinse the beans, add to the slow cooker along with the Rotel and marinara sauce. Cook for 30 minutes.
- Add in the chicken stock and pasta and turn the slow cooker to low, cook for 4 hours, or until pasta is done and veggies are tender.
Notes
- Serve with warm bread or breadsticks.
- You can brown the meat first on the stovetop with the onions if you prefer, then add them to the slow cooker and follow the steps.
