Ingredients for Pumpkin Squares
Eggs: Used to make the batter of the squares
Sugar: Regular white sugar added to the batter for sweetness.
Oil: Gives moisture to the batter.
Flour: Will be the base of the batter.
Cloves, Allspice, Nutmeg, Cinnamon: Gives the batter the “pumpkin spice” flavor
Baking Soda: Will allow the squares to rise and be fluffy.
Salt: Added to the batter to balance out the sweet flavor.
Pumpkin Puree: For the pumpkin part of the batter.
Crisco: Used to grease the pan before putting the batter in.
For the Frosting:
Cream Cheese: The base for the frosting.
Butter: Will make the frosting rich and creamy. Use a softened butter (not melted)
Powdered Sugar: Will give the frosting a sweet flavor.
Vanilla Extract: Gives a subtle vanilla flavor.
What’s the difference between pumpkin puree and pumpkin pie filling?
For this recipe you definitely want the pumpkin puree. Pumpkin puree is just cooked pumpkin in a can. The pumpkin pie filling has all kinds of spices added to it and is sweetened too. The pumpkin squares would turn out way too sweet if you used the pumpkin pie filling, so stick with the pumpkin puree for this recipe.
Does it matter what size pan to use for Pumpkin Squares?
You will need a big baking sheet with an edge, around the size of a 12×17. This big size will allow for the squares to be not too thick. If it gets too thick, it starts to make baking it a little tricky, with the middle not getting done. So stick to a big sheet pan to spread the batter out in a thinner layer.
How to make Pumpkin Squares
Beat the eggs and sugar in a mixer.
Add the oil and the flour, cloves, allspice, baking soda, salt, cinnamon, and nutmeg.
Add in the pumpkin and mix together.
In a 12×17 pan with sides, grease with Crisco.
Then add a little flour over the Crisco and shake the pan to spread around.
Add in the pumpkin batter and even out all over.
Bake at 350 degrees for 25 minutes or until golden brown. Toothpick should come out clean when tested.
Let the pumpkin squares cool before adding frosting.
To make the cream cheese frosting:
Whip up the room temperature cream cheese in a mixer.
Add 1/2 cup of softened butter, 3 cups powdered sugar, and 1 tsp vanilla.
Mix together until nice and creamy.
Spread cream cheese frosting over the COOLED pumpkin Squares.
Cut into square sized pieces to serve!
These are good for up to one week. Store in the refrigerator because of the cream cheese frosting.
