Ingredients for BBQ Pulled Pork Quesadillas

For the Pulled Pork:

2 lbs (approx. 1 kg) pork shoulder or pork butt

2-3 garlic cloves

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon oregano

1/4 teaspoon cinnamon

1/4 teaspoon cayenne pepper (adjust to taste)

1 Tablespoon lime juice

1/2 cup beef broth

For the Quesadillas:

8-12 medium-sized flour tortillas

2 cups shredded cheddar cheese or a blend of your favorite cheeses

How to make BBQ Pulled Pork Quesadillas

Prepare the Pulled Pork:

In a small bowl, combine chili powder, cumin, salt, black pepper, oregano, cinnamon, and cayenne pepper to make the dry rub.

Rub the dry rub mixture all over the pork shoulder, ensuring even coverage.

Transfer the pork to a slow cooker and add the beef broth, lime juice, and garlic cloves sliced in half. Cover and cook on low for 6-8 hours or until the pork is tender and easily shreds.

Assemble the Quesadillas:

Preheat a clean skillet or griddle over medium heat.

Place a tortilla on the skillet and sprinkle a layer of shredded cheese on one half of the tortilla.

Spoon a generous amount of the cooked pulled pork over the cheese layer and pour a little barbeque sauce over the meat.

Top with another layer of shredded cheese and lay another tortilla over the filling.
