This recipe is perfect for using up all those apples sitting on your counter or in your fridge! I love apple season and always end up over buying at the apple farm..oops..they are just so good when picked right from the tree.
These easy oven baked apple pancakes are a great breakfast dish for anytime. This really comes together pretty fast but tastes like you spent all morning making it!
This is such a warm and comforting breakfast dish that will sure to be a favorite!
What type of apples are best for Baked Apple Pancakes?
Granny smith apples are great for baking. They are tart to balance out the sweet of the rest of the dish. They also hold up very well while being cooked, they don’t get mushy like some other types of apples. Some other types that would also work great would be Jonagold, Honey crisp, and Pink Lady apples. All have a crisp and slightly tart flavor and hold their shape while baking.
Stay away from the softer apples like Gala, Fuji, Red Delicious, or MacIntosh. Although very good on their own, they just don’t have the right flavor for baking.
What kind of pan to use for Baked Apple Pancakes?
I love to use my big cast iron skillet for apple pancakes. Since the last part of this recipe is baked this is a nice option so that you only have to use one pan from stovetop to oven. You can use any other pan that is oven safe, or last option would be to cook the apples on the stovetop, then transfer the apples and batter to a small casserole dish to bake it. Works just as well, just more cleaning to do!

Ingredients for Baked Apple Pancakes
- Butter: Used to cook the apples.
- Apples: You will need about 2 medium apples for this recipe. Peeled, cored, and then sliced up before cooking. Choose a tart apple like Granny Smith, Jonagold, Honeycrisp, or Pink Lady.
- Brown Sugar: Added to the apples while cooking to sweeten it slightly.
- Cinnamon: Added to the apples while baking..because cinnamon and apples just go together!
- Eggs: Part of the pancake batter that we mix up before adding the apples.
- Milk: Added to the pancake batter to make it creamy.
- Flour: Added to the pancake batter to thicken it up.
- Salt: In the pancake batter for a slight salty flavor with the sweet.
How to make Baked Apple Pancakes
Preheat your oven to 450 degrees.
Peel, core, and slice up the apples.
Next you are going to need a cast iron skillet or any skillet that can go in the oven, since we will be baking this. I really like my Lodge cast iron skillet, it works perfect for this recipe!
Melt your butter in the cast iron skillet on the stovetop over medium heat.
Then add in your sliced apples and sprinkle with 2 Tablespoons brown sugar and 1/4 teaspoon cinnamon.
Now mix all the apples, brown sugar, and cinnamon together and lower the heat to low, and let it simmer for about 5-6 minutes or till apples are tender.
While that is cooking beat together your eggs, flour, milk, and salt.
Now pour that mixture over your apples in the skillet.
By now I’m sure the kitchen is smelling oh so wonderful!
So go ahead and pop that in the oven that is preheated to 450 degrees for 8 minutes.
Remove from the oven after the 8 minutes and reduce the heat to 370 degrees.
Sprinkle the remaining brown sugar and cinnamon over the top and return to the oven for 8-10 minutes until evenly brown.
Remove from the oven and enjoy!
I like to cut this in triangles like you would a pizza or pie and serve.
To make this a little more fancy you can transfer the stovetop mixture into individual casserole dishes and then bake so everyone has their own dish!

- Preheat the oven to 450 degrees F.
- Melt the butter in a 10 inch oven safe skillet over medium heat.
- Arrange the apple slices in a single layer in the butter.
- Combine 2 Tablespoons of the brown sugar, and 1/4 teaspoon of the cinnamon together. Sprinkle over the apples, mix together, lower heat and cook for 5-6 minutes until apples are tender. (stirring frequently)
- Beat the eggs, milk, flour, and salt together. Pour over the apples in the skillet.
- Place the skillet in the oven and bake for 8 minutes.
- Remove from the oven and reduce the heat to 370 degrees F. Sprinkle remaining brown sugar and cinnamon over the top of the apples. Return to the oven and bake for another 8-10 minutes until golden brown.
Notes
- To make individual servings , transfer from the the skillet to mini casserole dishes before baking.
