Soft and buttery snowball cookies with pecans and rolled in powdered sugar. A delicious and easy Christmas cookie!
These snowball cookies are so yummy and one of my favorites to make for Christmas. They actually have the same dough recipe as my Christmas Thumbprint cookies, but instead of frosting they are rolled in powdered sugar.
There are no eggs required for this recipe and the dough comes together really fast. You can make the dough ahead of time and refrigerate until you are ready to bake.
These snowball cookies only have 6 ingredients, and because they are mostly made with butter and flour, they have a melt in your mouth kind of texture to them.

Ingredients for Snowball Cookies
Butter: One cup of butter is needed and will be creamed together with the sugar before adding the flour.
Vanilla Extract: Adds a hint of vanilla flavor. Added when creaming together the sugar and butter.
Pecans: Chopped up very small and added for flavor and texture.
Sugar: Regular white sugar is creamed together with the butter.
Flour: Added after the butter and sugar are creamed together.
Powdered Sugar: Sprinkle or roll the cookies in after baking.
How to make Snowball Cookies
Cream the butter, sugar, and vanilla extract together in a mix master until dissolved and fluffy.
Slowly add in the flour on low speed until mixed well.
Slowly add the pecans in last. Make sure the pecans are chopped up very fine.
You can make the cookies right away, or store the dough in plastic wrap in the refrigerator until you are ready to bake.
Before baking, take the dough out of the fridge and let it come to room temperature before rolling in balls.
Roll into small cookie size balls, about 1 inch in size.
Place the cookie balls apart on baking trays.
Bake at 350 degrees Fahrenheit for 15 minutes.
Let the cookies cool on racks before adding the powdered sugar.
When the cookies are cool, either sprinkle the powdered sugar over them, or roll them in the powdered sugar.
If the snowball cookies absorb the powdered sugar after some time, re sprinkle the powdered sugar over the top to give them a fresh look.
