Light and fluffy, easy pumpkin muffins. A streusel topping makes these taste like they are straight from the bakery.
This recipe is actually my family’s recipe for pumpkin bread, but my kids always prefers muffins over the bread..just easier to eat I guess! So I just put the batter into the muffin tins and evenly distributed the streusel topping and then reduced the time.
These have such a nice pumpkin flavor, just perfect for the fall. Also with these being muffins they are great to bring along in the car or to pack in a lunch!
These can easily be made without the streusel topping if you prefer. Keep in mind that the streusel topping brings some of the sweetness to these muffins so if you take it out you may want to add a little more sugar into the batter.
This recipe makes quite a few muffins but that is ok with me because I usually end up freezing half of them. Yes they really do freeze well!

Pumpkin puree vs. pumpkin pie filling for pumpkin muffins
For pumpkin muffins you want the pumpkin puree, which is just cooked pumpkin in a can. The pumpkin pie filling has all kinds of spices added to it and is sweetened too. The pumpkin muffins would be much too sweet if the pumpkin pie filling was used. Leave the pumpkin pie filling for pumpkin pies and stick with the pumpkin puree on this recipe.
Ingredients for Pumpkin Muffins
Flour: The base of the batter and also adds structure to the muffins.
Sugar: Adds sweetness to the pumpkin muffins
Baking Powder & Baking Soda: Helps the muffins rise to be light and fluffy
Salt: Balances out the sweet flavor.
Cinnamon & Nutmeg: Gives it more of that pumpkin spice flavor
Pumpkin Puree: Thickens the batter and brings the pumpkin to the pumpkin muffins. Stick with the pumpkin puree for this and not pumpkin pie filling.
Oil: Keeps the muffins moist while baking.
Eggs: Added to the batter to hold everything together while baking.
Streusel Topping:
Butter: Should be cold and cubed, will then cut it into the dry ingredients with a pastry cutter or fork.
Brown Sugar: Added for its rich sweet flavor.
Flour: Used as the base for the streusel
Cinnamon: Balances out the sweet flavor.
How to make Pumpkin Muffins
Combine the sugar, flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
Add in the pumpkin, oil, and eggs until just combined. Do not over mix.
To make the streusel topping, combine the 3/4 cup flour, 1/2 cup brown sugar, and 1 teaspoon cinnamon.
Cube up the cold butter and then add it to the dry ingredients.
Mix in the butter using a fork or a pastry cutter. Keep mixing it until it is in small pieces.
Line the muffin tins with paper liners or spray them with non stick spray. Fill each muffin tin until about 3/4 full.
Sprinkle the streusel topping over each muffin.
Bake at 350 degrees Fahrenheit for 20-25 minutes, or until toothpick comes out clean.
Let them cool for about 10 minutes.
This recipe will make about 12-18 muffins. They freeze well too!
Can I make pumpkin bread with this recipe?
If you prefer to make a pumpkin bread, you can use this same recipe and it will make 2 loaf pans ( 8×5 size) and bake for 45-50 minutes. Just as yummy!!
