Ok get ready for what might be one of the easiest meals to make!…seriously..
We are pretty much just going to open a bunch of cans of veggies and throw everything in the slow cooker.
So you can use whatever kind of chicken you have on hand for this. If you have leftover chicken from something..great! Just shred it up and add it to the slow cooker. If you don’t, you can use rotisserie chicken, fresh chicken, or canned chicken.
In my post, I used fresh chicken and put it in the slow cooker with a little bit of water, let that cook for a couple hours, shredded it, and then proceeded to make my soup.
I think I cut up one veggie for this, the yellow pepper, and the rest is just from cans. You don’t even need to cook the rice, just throw it in there and let it cook with everything else!

Ingredients for Chicken Tortilla Soup
Chicken Breasts: Two chicken breasts or around half a pound, cooked and shredded. Leftover chicken works great, shredded chicken from a rotisserie chicken, fresh chicken breasts, or frozen chicken breasts can all be used.
Black Beans: 15 oz can, drained and rinsed.
Yellow Bell Pepper: One pepper, de seeded and chopped into small pieces.
Corn: 14.5 oz can, drained, or the same amount for frozen corn.
Rotel Tomatoes: 10 oz can added to the slow cooker, gives a little bit of spice to the soup.
Diced Tomatoes: 14.5 oz can added to the slow cooker with the juices.
White Rice: 1/2 cup uncooked, added straight to the slow cooker, no need to pre cook it. Brown or jasmine rice can also be used.
Tomato Stock: 4 Cups of your favorite tomato stock. I really like using Knorr tomato bouillon.
Chicken Stock: 4 cups of your favorite chicken stock. Again, I like the Knorr chicken bouillon.
Salt and Pepper: Using fresh ground sea salt and fresh ground peppercorn will give you the best flavor.
Toppings:
Tortilla Strips: You can find these in a bag in the Hispanic section of the grocery store.
Shredded Cheese: Use a mixed blend or a taco mix blend of cheese.
Avocados: Sliced and added to the top of the soup.
Cilantro: Chopped and added to the top for garnish.
How to make Chicken Tortilla Soup
I chose to make mine with fresh chicken, so I put a couple in the slow cooker with a little bit of water, salt, and pepper.
Let them cook for a couple hours until tender, then shred them apart with some forks.
Does anyone else use these slow cooker liners?? They are pretty amazing! They hold up very well and then when you are done just lift and throw away. There is NOTHING to clean afterwards….AMAZING! I hate cleaning my slow cooker, so these are a great find for me!
After the chicken was done I added the can of black beans(rinsed), can of corn, can of diced tomatoes, can of Rotel tomatoes, the chopped up yellow pepper, tomato and chicken stock, and the uncooked rice.
If you are unsure what kind of tomato stock and chicken stock to use, the Knorr bouillon brand is the kind I like best. It is a powder, so I just heat up my water(however much I need for the recipe) then add in the right amount of mix and stir it all together to make the stock. This is by far the most flavorful stocks I have come across.
Then just let it cook on low for 2-4 hours, or until the rice is cooked. It might not even take that long, just watch the rice. Stir occasionally so the rice does not stick to the bottom.
Serve with some tortilla strips on top, shredded cheese, avocados, and cilantro!
