These cheesecake squares are super easy to make and take no time at all! It is a no bake dessert and only takes a couple hours in the fridge to set.
This is my grandma’s recipe so it’s an oldie but a goodie! It has a very light and fluffy texture, unlike normal cheesecake which is pretty dense, and the taste is amazing!
The light and fluffy texture makes these cheesecake squares a perfect spring or summer dessert! Also serves a lot of people, since it is made in a 9×13 dish, so easy to bring to a party or summer BBQ.
Let me tell you to go ahead and buy the premade crushed graham crackers, so much easier than crushing your own! Of course I’m talking about my own experience…lol. I thought, I have graham crackers at home already, I will just use those. Well…it works ok..and is great if you need to let off some steam while crushing the crackers with a rolling pin..but if not just go ahead and get yourself the already crushed graham crackers.

Ingredients for Cheesecake Squares
3 ounce package of lemon jello
1 cup boiling water
8 ounces cream cheese (softened)
1 cup sugar
3 Tablespoons lemon juice
1 teaspoon vanilla extract
13 ounce can evaporated milk
1 stick butter (1/2 cup)
1 1/2 cups crushed graham crackers, easier to buy the already crushed kind, but you can also crush up regular graham crackers too.
1/2 cup crushed graham crackers for topping
How to make Cheesecake Squares
Dissolve the jello in the boiling water, stir in the lemon juice and set aside to cool.
If you didn’t buy the already crushed graham crackers, place your graham crackers in a bag and smash them up with a rolling pin.
Melt the stick of butter in a sauce pan on the stove.
Spread the crushed graham crackers in the bottom of a greased 9×13 pan.
Pour the melted butter on top of the graham crackers and mix together and press down.
Set aside.
In a mixer, combine the cream cheese, sugar, and vanilla. Beat until smooth and fluffy.
Add the cream cheese mixture together with the cooled jello. Set aside.
Chill your bowl on the mixer. Add the evaporated milk to the chilled bowl and beat with the wire whisk attachment until stiff peaks form.
Pour the jello mixture into the evaporated milk and gently mix together.
Spoon on top of the graham cracker crust. Spread out evenly. Chill in the refrigerator for 3 or more hours.
Sprinkle the 1/2 cup of crushed graham crackers on top before serving.
Keep refrigerated and ENJOY!!!!

- Melt butter in a sauce pan on the stove, then mix with the 1 1/2 cups crushed graham crackers. Press into the bottom of a greased 9×13 pan. Set aside.
- Dissolve jello in the 1 cup boiling water. Stir in lemon juice and set aside to cool.
- Combine cream cheese, sugar, and vanilla in a mixer. Beat until fluffy.
- Combine the cream cheese mixture with the cooled jello. Mixing until smooth.
- Chill the bowl for the mixer. Pour the evaporated milk in the chilled mixer bowl and beat with the wire whisk attachment until stiff peaks form.
- Fold in the cream cheese mixture with the evaporated milk.
- Spoon the mixture on top of the graham cracker crust. Spread out evenly. Chill in the refrigerator for 3 hours.
- Sprinkle the 1/2 cup crushed graham crackers on top before serving.
