This is so so very tasty, I am in LOVE with this sandwich! Not to mention that it is super quick to make! Can be eaten for lunch or dinner, or in my case breakfast too! Lol
My family and I recently visited Disney and one of our stops was in Hollywood Studios. While we were there in the Toy Story section we dined at Woody’s lunch box. We ordered the beef brisket melts as our meals and man oh man were they tasty! So tasty that when we got home we were craving them again! Here steps in my copycat version of that sandwich! I gotta say that I think I nailed it, these taste just as great as the parks did.
So to make it super easy on myself, I bought the Jack Daniels brisket that is pre cooked. I just heated it up and added it to the sandwiches. These are basically like cooking a grilled cheese sandwich except you add in the meat and pickles.
Go ahead and use whatever is your favorite brisket, but the Jack Daniels brisket was so easy since they were cooked already and the BBQ sauce is on them already too, adding BIG flavor to the sandwich!

Ingredients for Brisket Grilled Cheese Sandwich
- Sourdough Bread: Bakery sourdough bread has the best flavor, or homemade! Store bought sourdough is good too, but it will not be as fresh.
- Beef Brisket: Any kind of brisket will work for these sandwiches, I used a store bought one to save on time. Also add any BBQ sauce to your brisket that you like, or don’t add any at all, whatever you prefer!
- Monterey Jack cheese: Used as one of the cheeses for the sandwich, the Monterey Jack cheese brings a nice subtle sweet flavor to the sandwich.
- Sharp cheddar cheese: The second cheese used in the sandwich, the tangy flavor of the sharp cheddar cheese is a nice contrast to the Monterey Jack.
- Dill Pickles: Also brings a nice tangy flavor and a bit of a crunch to the sandwich. I like the dill pickle flavor myself but you could also use a sweet pickle or bread and butter pickle depending on your preference. Works best when the pickles are sliced into flat rounds.
- Butter: Spread it on the outsides of the bread so when you grill it, the outsides get brown and crispy. Any kind of butter will work with this.

What kind of brisket for brisket grilled cheese sandwiches?
Any kind!!! I personally use the store bought only because cooking brisket at home takes 12 plus hours to cook..low and slow. So this is a HUGE time saver for me. If you want to make your own, do it! You can find a great recipe for it here. Or you can grab some from your favorite restaurant and then make these with the leftovers!
Heat up the brisket according to the package. I love the flavor of this Jack Daniels one, and it makes this meal super fast to make since it is pre cooked. This 20 ounce size package makes enough for 4 sandwiches.
Cast Iron Skillet or Panini Maker?
You can make these sandwiches on either one. Or even in a toaster oven! I personally don’t have a Panini maker, so I use my cast iron skillet with a cast iron sandwich press to make all my sandwiches.
Heat up a cast iron skillet over medium to high heat. Once the pan is nice and hot, place a piece of bread, butter side down, on the skillet.
Layer the sharp cheddar cheese, pickles, brisket, and Monterey Jack cheese. Top off with the last piece of bread, butter side facing you.
I like to use my cast iron sandwich press to press the sandwich down. You don’t necessarily need to do this step, I just like the way it makes the sandwich stick together and the grill marks that they leave.
Let the underside brown up and then flip it over and cook until both sides are brown and the cheese is melted. This will only take about 2-3 minutes a side.
If your pan starts to get too hot, turn down the heat to a low so that you don’t burn it. You don’t want to cook it too fast, otherwise the cheese doesn’t have time to melt.
Remove from the pan and slice in half. Serve immediately and ENJOY!
The cast iron sandwich press also makes those grill marks, which I like!!lol
These don’t keep very well for leftovers, so eat them while they are hot! I would recommend keeping all the ingredients separate in the fridge, then when you want a sandwich make them up as needed.

- To assemble the sandwiches, layer sharp cheddar cheese, pickles, brisket, and the Monterey Jack cheese, then place the top piece of bread.
- Heat up a cast iron skillet.
- Place sandwiches on skillet and press down with cast iron sandwich press.
- Brown on one side, then flip and cook until both sides are brown and cheese is melted.
- Slice in half and serve immediately.
