Ingredients for Caramel Corn
12 cups popped popcorn (about 1/2 cup unpopped kernels)
1 cup (2 sticks) unsalted butter
1 cup brown sugar
1 cup pure maple syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon pure vanilla extract
How to make Caramel Corn
Prepare the Popcorn
Pop your popcorn using your preferred method (microwave, stovetop, or air popper).
Make sure to remove any un popped kernels.

Prepare the Caramel Sauce
In a saucepan over medium heat, melt the butter.
Stir in the brown sugar, maple syrup, and salt.
Bring the mixture to a boil, stirring constantly.
Once it reaches a boil, stop stirring and let it cook for about 4-5 minutes. You’re looking for a nice, golden caramel color.
Remove the saucepan from the heat and carefully stir in the baking soda and vanilla extract. The mixture will bubble up, so be cautious.

Coat the Popcorn
In a large oven-safe bowl, pour the maple caramel sauce over the popped popcorn.
Gently fold the caramel and popcorn together until all the popcorn is coated.
Bake
Preheat your oven to 250°F (120°C).
Spread the caramel-coated popcorn evenly on a large, rimmed baking sheet.
Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even coating.
Cool and Enjoy
Once out of the oven, allow the caramel corn to cool completely.
Break it into bite-sized clusters.
