Ingredients for Cowboy Caviar

1 can (15 ounces) black beans, drained and rinsed

1 can (15 ounces) black-eyed peas, drained and rinsed

1 can (15 ounces) corn, drained (or use frozen corn, thawed)

1 cup diced tomatoes (fresh or canned)

1/2 cup diced red onion

1/2 cup diced bell pepper (any color you prefer)

1/4 cup diced jalapeno pepper (seeds removed for less heat, optional)

1/4 cup chopped fresh cilantro

2-3 cloves garlic, minced

1/3 cup extra-virgin olive oil

1/4 cup red wine vinegar

1 tablespoon freshly squeezed lime juice

1 tablespoon honey or granulated sugar

1 teaspoon ground cumin

Salt and pepper to taste

Tortilla chips (for serving)

How to make Cowboy Caviar

In a large mixing bowl, combine the black beans, black-eyed peas, corn, diced tomatoes, red onion, bell pepper, jalapeno pepper, garlic, and chopped cilantro.
