Combining a Tex Mex flavor with meatloaf was an instant hit in my house. It’s a whole new take on meatloaf night!
I also love making the meatloaf into mini individual servings. It switches things up a bit, is fun for the kids, and also super easy to serve.
I love to chop up some potatoes and broccoli and cook them on the same pan as the meatloaf.
They cook up fast and get a nice crisp texture to them.
I have also cooked carrots or zucchini alongside it too. Pretty much whatever I have available in my fridge is what I use as the side!
I love using ground turkey in any recipe that is usually made with ground beef. Most of the time you can’t even tell the difference, plus it is so much healthier!
Just one easy swap to get a healthier lifestyle. You can easily use ground beef if you prefer it though!
The Tex Mex gravy is super easy to make, I usually have all the ingredients in my kitchen already! All you need is flour, olive oil, garlic, taco seasoning, and beef broth.

To try and sneak in some veggies for my kids, I have sometimes added some very tiny cut up pieces of carrots or other veggies into the meatloaf mixture. A great way to get your kids to eat their veggies!
Ingredients for Tex Mex Meatloaf
1 pound ground Turkey or ground beef
1/4 cup breadcrumbs
1 egg
1 cup broccoli
1-2 potatoes
1 1/4 cup beef broth
2 Tablespoons taco seasoning
1 clove garlic smashed
4 teaspoons flour
1/8 teaspoon black pepper
1/8 teaspoon sea salt
3 Tablespoons olive oil
How to make Tex Mex Meatloaf
Preheat the oven to 450 degrees.
Cut up the potatoes and broccoli into small cubes and pieces and toss in 1 Tablespoon olive oil, salt, and pepper to taste. I leave the skins on the potatoes, but you can peel them if you don’t like to eat the skins.
In a large bowl, mix together the egg and breadcrumbs to make a paste.
Add the salt, pepper, and ground turkey or ground beef and shape into 4 mounds.
Spray a non stick spray on a baking pan. Place the mini meatloaves, potatoes, and broccoli all on the pan.
Bake for 15-20 minutes, or until internal temperature of meatloaves is 165 degrees, and potatoes are tender.
In a pan on the stove, heat up 2 Tablespoons olive oil and add the garlic, cook for about 30 seconds.
Add the taco seasoning and flour and cook another 30 seconds.
Slowly add the beef broth, stirring constantly. Bring to a boil, and then simmer for 5 minutes.
Pour the gravy over the meatloaves and serve with the broccoli and potatoes on the side.
