I am all about easy recipes, and this is a super easy dip to whip up. Only three ingredients and then just mix them all together. It is so yummy and addicting. It is a bit spicy, so if you don’t want the heat, swap the Rotel for regular diced tomatoes!
Serve this with tortilla chips, pita bread, a dip for soft pretzels, you name it! It pretty much goes well with anything!

Ingredients for Chicken Queso Dip
Velveeta Cheese: 8 ounces (half a stick), melted in a bowl in the microwave.
Rotel: 10 ounce can of the diced tomatoes and green chilies, if you do not want it spicy, swap this for 10 ounces of diced tomatoes.
Hormel White Chicken Chili with Beans: 15 ounce can heated with the cheese.
How to make Chicken Queso Dip
Gather your ingredients..there are only three! Velveeta cheese, Rotel, and Hormel white chicken chili with beans.
Cut the Velveeta cheese in half if you bought the 16 ounce box. Place the cheese in a microwave safe bowl and cook for 30 seconds at a time, stirring in between, until it is melted. Should only be a couple minutes total. You want to break it up and stir it in between so that it doesn’t burn.
Once the cheese is melted, add in the Rotel and Hormel White Chicken Chili. Stir everything together and pop it back int the microwave and heat 30 seconds at a time, stirring in between, until it is hot. This part should also only take a minute or two total.
Mix it up again before serving with fresh tortilla chips, pita bread, or soft pretzels!
Stays fresh for 5 days when stored in the refrigerator.
