Pot Roast

Easy pot roast cooked in the crock pot. Tender meat that falls apart, and a homemade gravy to pour over the top!

This is so super easy to make and tastes amazing! I even have a homemade gravy recipe to go with it! 

I love simple dinners in the crock pot that you can prep in the morning and then say..ok dinner is done! HA! 

A little searing of the meat and then just pop it in the crock pot with the potatoes, carrots, seasonings, and beef stock. Don’t forget to save the juices when done to make the gravy with.

Making the gravy takes around ten minutes to make, but that doesn’t seem so bad when everything else is already done!

The meat also makes great leftovers that you can make sandwiches out of..YUM!

What kind of meat do you need for Pot Roast?

A beef chuck roast, beef round roast, or beef chuck tender roast are the best choices for pot roast. Beef roast is a big cut of meat that is usually pretty cheap. When you cook it low and slow, it becomes meat that just falls apart and is super tender. 

What kind of vegetables are added for Pot Roast?

I only added potatoes and carrots to my pot roast because that is what my family likes! However, onions, carrot, celery, and potatoes have all been added before and taste amazing in the pot roast. 

Ingredients for Pot Roast

Beef Roast: Chuck roast, round roast, or beef chuck tender roast are all options to use.

Potatoes: Small red or yellow potatoes are great for pot roast. Just toss them in with no peeling or dicing!

Carrots: Large carrots are great to use, peeled and the ends cut off. Baby carrots can also be used, just toss those in with no prep.

Onions: Leave in large slices, white or yellow taste best in this recipe.

Beef Stock: I personally like the Knorr Beef Stock, it is very flavorful and just makes everything taste amazing.

Steak Seasoning: A nice mix of seasoning to add to the roast before cooking.

Creole Seasoning: Use just a little bit to bring a little kick to the roast.

Italian Seasoning: A good herb mix to add on the roast.

For the Gravy

Juice leftover from cooking the roast: Save the juice once the roast is done cooking, this has lots of flavor in it!

Flour and Butter: Melted together to form a roux as a base for the gravy.

Browning Sauce: Added for color and taste into the gravy.

Salt and Pepper: Added for flavor, just a pinch of both is needed.

How to make Pot Roast

Heat a large pan on high on the stovetop. Sear the meat on all sides, just a minute or two on each side so it gets a nice brown color.

Spray a non stick cooking spray into the slow cooker. Place the seared roast in the slow cooker.

Rub in all the seasonings into the meat and pour the beef stock into the bottom of the slow cooker.

Place the carrots, potatoes, and any other sides into the slow cooker with the meat.

Cover and cook on high for 1 hour, then turn to low for 5 hours, or until the meat is tender and falls apart.

Once the meat is done, remove, and remove all the sides as well.

Pour the remaining juice into a measuring cup or large bowl.

Your meat should fall apart in shreds like in the picture below!

To make the gravy

Heat a skillet on medium high heat on the stovetop.

Melt the butter, then add the flour and mix together, cook about 1 minute.

Start slowly adding in the cooking juices, stirring with a whisk. Add about 1/4 cup at a time, stir it in and let it cook for about a minute or so. Keep repeating those steps until you have a gravy consistency that is runny but not too watery. You might not use all the cooking juices.

Add in the browning seasoning and salt and pepper for flavor at this point. Stir it together and then transfer to a pouring dish or gravy bowl.

To serve, pour the gravy over the meat and side veggies.

  1. Heat a skillet on the stovetop over high heat. Sear the roast on all sides, just a minute or so on each side.
  2. Spray a non stick cooking spray in the slow cooker. Transfer the seared roast to the slow cooker.
  3. Rub the Creole seasoning, steak seasoning, and Italian herbs seasoning into the roast.
  4. Pour the 1 cup beef stock into the bottom of the slow cooker.
  5. Add any side veggies to the sides of the roast.
  6. Cover and cook on high for 1 hour. Reduce the heat to low and cook for 5-6 hours, or until meat is tender and falls apart.
  7. Remove the roast and veggies, reserve the leftover liquid for the gravy.
  8. To Make the Gravy:
  9. Heat a skillet on the stovetop over medium heat and melt the butter. Whisk in the flour and cook for 1 minute.
  10. Slowly add (1/4 cup at a time) ,the reserved cooking liquid, stirring with a whisk and letting it cook about 1 minute before adding more. Keep repeating until you have a gravy consistency. You might not use all the reserved liquid.
  11. Add the browning sauce and salt and pepper to taste.
  12. To serve, pour gravy over the roast and side vegetables.
